Will this be enough or even good enough?

Hi, I am doing a buffet spread for a school function which people are paying £7.50 to £10 per head. I reckon there will be 65 people. Do you think this is enough food? Do you think this is good enough spread?

40 pieces of Ham
50 pieces of Beef
40 pieces of Turkey
5 x Veg Quiche (12 pieces each)
8kg Coleslaw
10kg Potatoe salad
5kg Pesto Pasta salad
? Leaf Salad
45 slices of cheesecake
40 slices of cake

What do you think? Opinions/suggestions appreciated.

I'd probably add some bread - maybe rolls or french sticks sliced up.

I'm one of those odd people that doesn't like dressings - mayo, salad cream, vinegar etc so that would rule out the potato & pasta salad and the coleslaw.

What arrangements are there for drinks? Is it an alcohol free event? If not, first glass is free then pay as you go. Alternative soft drinks available. Tea or coffee? Can you use the school kitchen (if there is one) and the school equipment? I hope/assume you are not doing this single handed? It can be great fun!

We are offering a complimentary drink on arrival and I am doing vodka/jelly shots to get things going. After that it is pay as you go (beer & wine) with alternative soft drinks and sparkling water. I am doing the majority so trying to keep it simple - that is why I am not doing hot food.

Just read your op again. Regarding quantities I think it is adequate but would add that quiche is very morish and popular especially as it comes in different varieties ie vegetarian, which you need to consider, and a good finger food and there is not enough for one slice each.

Maybe I am a greedy fecker, but if I were at a buffet with that choice I would take a slice of each of the meats (depending on the sizes of the slices!) or a couple of slices of whatever looked most appetising - there isn't really enough for people to do that.

Definitely add bread for bulk. Up the quiche.

I would do half of the potatoes just in butter/parsley as a plainer option.

Pouring cream for the cheesecake!

If you have budget, I would add crisps, breadsticks, olives and humous (or some other dippy thing) as a good picky but cheap addition.

Good luck, sounds like a good effort!

You have seriously stimulated my appetite! so just want to add, don't underestimate the appeal of a good sandwich triangle! They have been overlooked in recent years but are much appreciated and can be varied. Again a good finger food. Going to have supper now. Smile

i would be tempted to make the meat in to sandwiches, like YouCantTeuchThis people may take a slice of each - if you make them into lovely little sandwiches cut into triangles you get four sandwiches per slice, people are less likely to take 12 triangles (iyswim?)
maybe then you could do less meat and then some tuna sandwiches

maye some crudities? cheap to do?

I'd much rather have the plain meat than a sandwich. People tend to put mustard/pickle/mayo in sandwiches, they never make them plain [bleurgh emoticon!] Also the slices of meat are a better option if you are serving poato/pasta salad, coleslaw and salad leaves - sandwiches wouldn't really go with those.
