Something like spelt?

What about a barley flour or rice flour or potato flour?

Is cornmeal or corn flour allowed?

toomanypushchairs · 12/11/2005 23:18

corn flour is, but not barley. she can't have wheat, oats, barley or rye. We get gluten free plain flour on prescription, its ok for cakes but can be quite crumbly. my sister (xena) has a childrens cookbook with a recipe for cranberry and white choc biscuits. dd really wants to make them. I'll drop the oats though and try the coconut, might also swap the cranberries for raisins as she prefers those.

Cornmeal is lovely for baking - try looking in west Indian cook books (or ask on here)

You can make porridge with it and dumplings

I think you can use it as a substitue for flour in things like crumble

I often use coconut instead of oats as ds prefers them.
