What on earth can I cook for dinner that doesn't contain meat, fish, nuts or cheese??

A friend and her new bf are coming around for a meal on thurs but between them they don't eat cheese, fish or nuts. And we don't eat meat...

The only things I can come up with are veg curry or thai veg curry. I'm not inspired by either! The only other idea is a Mexican, but that's pretty messy...

hummous, pitta bread, avocado dip, potato salad, green salad, roasted vegetables - peppers, aubergine, onions, fennel, tomatoes, dishes of olives etc..

Do a veggie or quorn and veggie chilli and serve with rice or baked potatoes and guacamole and sour cream. It's not really messy and can be prepared in advance.

How about an asparagus risotto? Very in season, and just right for this time of year. Just dont put any parmesan on it. With a rocket/green salad?

Not sure about quorn as if they dont like the taste of meat, they probably wont like quorn.

Lemon butter gnocchi. bagels with griddled vegetables, warm crisp noodle salad , tom tan noodles,pumkin and apple curry,Mexican tortillaswith peppers and beans, warm butterbran salad with spring onions with maple mustard dressing,red until salad with ginger and chili broccoli and smoky tofu in holding sauce,porcini risotto, chickpea balti, polenta with mushroom ragout. all these are lovely and dead easy to do. oh! a quick desert banana chocolate maple ice is great!

Oops a couple of spelling mistakes. I'm on my phone and mistakes were'my obvious. Wrong words were beans and lentils!

Roast a tray of cherry tomatoes drizzled with olive oil, salt & pepper and garlic in the oven until blistered and cracked - mix with pasta and fresh basil, and make a big green salad. Pop in a couple of fresh garlic baguettes at the same time as the tomatoes. You guys can then add cheese to your own pasta Smile

What about a big platter of antipasti type stuff, the roasted cherry toms, marinated artichokes, olives, fresh basil, avacado, griddled aubergine and peppers etc, then you can have mozzarella, and anchovies, crayfish etc at one end for you, and charcuterie, parma ham etc at the other end for them - that way you don't have to handle/cook meat, but everyone gets their protein of choice so they don't feel cheated. And loads of crusty bread, dipping oil and balsamic etc.

Oh, so many suggestions. Thank you. love the idea of caponata, but every time I cook aubergines they end up chewy....will definitely go back to that recipe another time when I'm not under pressure to cook for others!
I think I may well go with the Mexican option after all...thank you for convincing me DioneTheDiabolist!
