I want to use gluten free flour in hummingbird bakery recipe. what do i need to do differently?

I am baking cakes for my lovely year 11s who have and exam tomorrow. One of them is coeliac so I thought I would be kind and make gluten free, which I have never done before. The hummingbird recipe is very liquid anyway, but will I need to add more?

Any tips gratefully received!

TBH i find its very unusual to just be able to swap normal flour for GF and get edible, reasonable results.

I have a GF friend and do try (and fail)
she has some fab GF free recipies and more often than not mixes all sorts of GF flours (to get good properties from them all) + some extra things like xantham gum too.

You can try to just swap the flour, but in all honestly id be surprised if it works as you hope.

Swopping it won't work. You need to add xantham gum, GF baking powder and a different ratio of flour - nearly double.

I'm GF and it has taken a LOT of trial and error to get anything edible.

I use normal recipes and just substitute the same amount of GF flour as for normal flour (I use Doves Farm self raising) or Plain (Doves Farm) GF flour and GF baking powder.
I very rarely (if ever) use xanthan gum in cakes. They always turn out perfectly edible and most people can't tell they are Gluten Free.

Maybe I'm just a cake-person...

I too usually find that I can just swap Doves Farmn sr gf flour directly into recipes and it works fine. Certainly did when I tried Hummingbird recipes too

Thanks nannyl. The flour I've got says you need to add extra milk as it's more absorbent than regular flour, so I shall try and see what happens! If it fails, I'll be off to sainsburys!

Ooh, that's good to know cmot and em, I've used doves farm..They're in the oven now, so I'll let you know how they turned out!

Well, they're ok. Not as lovely as my usual efforts, but edible. The child had better be grateful for all this! I certainly am for all the advice. Thanks ladies.
