In search of vegan food ideas...

...that don't include nuts, soya or tomatoes.

We're not actually vegan: we eat meat although we've always eaten a lot of vegetarian food. However, I've recently discovered I'm intolerant to dairy and 16 m.o. DS and I are off eggs, nuts & soya due to his eczema, and tomatoes make his skin really sore.

All our previously favourite veggie meals seem to involve nuts, eggs, tomatoes or cheese. Unfortunately DS won't even try bean burgers / veggie burgers so they're out. Hmm

Any suggestions would be gratefully received. :)

Oatly milk is good for making a dairy free béchamel, I add smoked salmon or ham and loads of veg to make a pasta sauce.

I substitute grated carrot and beetroot ( vacuum packed cooked stuff) and a good splash of red wine for tomato in bolognese.

I'm cooking haricots now, I'm going to make them into a dip like hommous with tahini, lemon juice and olive oil; 'cos i can't eat chickpeas also you can make a salad with them and soups they soak up flavours!

The problem with shop bought vegan stuff is the ingredients, i 've got some burgers in the fridge with dairy cheese in them I didn't read the box properly!if you make carrot and cucumber etc. sticks my lot eat them with dips.

I know you say he can't have nuts but is he ok with coconut? There's a coconut-based 'milk' that is the best substitute we have found (its called Kara) - has no funny taste unlike oat/rice/soya milk, and makes lovely creamy sauces.

Risottos - my DC love one with leeks and peas and lemon zest, or roasted pumpkin and garlic cloves.

We make a homemade sosmix-type thing by cooking lentils, adding oats and marmite and some crushed garlic, and leaving to go cold before making sausage shapes. Nice and not 'beany' so might convince your DS.

Soupy/stewy things - one with white beans, kale, and quinoa is loved by both my DC.

yeah i love risotto but I use whole org. rice it takes a little longer but much healthier.I soak then cook in rice milk and make a nice rice pudding with plenty of nutmeg,cinnamon and i use fructose and maple syrup for sweetness.

The instead-of-tomato suggestion for bolognese is one I'm definitely going to make a note of!

You can hardly tell it's not got tomato in angeldog, just grate very finely and don't get beetroot in vinegar it's the vacuum packed ready cooked stuff!!

My other suggestion is Thai curry, can be made quite mild and very easy if you just use some Thai curry paste and a tin of coconut milk b

I would look at Chinese and Japanese recipes, you would probably find loads of ideas there! This book is very good.
