after years of insisting on only peanut butter or cheese and pickle sandwiches ds2 has suddenly said he wants more variety but doesn't know what

he's very strictly veggie (but doesn't like most vegetables Hmm)

can you give me some veggie sandwich ideas which he can have a look at and choose from

cheese savoury - grated cheese, grated red onion, and a bit of mayo? Not the healthiest but properly delicious on multigrain.

you could try tomato chutney, cheese, and rocket/spinach/lettuce of some kind, and that's not too bad as you can replace any butter/spread with the chutney

also brie, apple, and mango chutney is very tasty but might not be to a child's taste

failing that hummus or hummus and falafel is very tasty and doesn't make the sandwich too soggy

or a feta salad with lettuce and cucumber etc? Nice if fresh but can make the bread a bit wet after a while

I'm a strict veggie too but do enjoy vegetables so I might be a bit off the mark here. Egg of some kind maybe?

cheesy bean salad - chopped up kidney beans, mixed with grated cheese, chopped up tomato, spinach, chopped olive & a bit of chopped basil -

Very nutritions & tasty - though all need to be quite finely chopped if so, the juice from the tomatoes, cheese & beans holds it all together, so its a good sandwich or wrap consistency (its great in wraps) this is one of DD favourites - though I think its better with a bit of spring onion added too, but she doesn't like that.

Pease pudding?? - its a similar in feel to peanut butter, simple & spreadable & very nutritious. keeps well in the fridge & can be put in a sandwich with salad leaves, or cheese etc, or even just on its own -

you can buy it, but not all bought is veggie - can be made with ham - its easy to make, its just yellow lentils/split peas, boiled to death with a bit of seasoning - its a custard consistency when hot & cools to a spread

thanks - will give some of those a try (though I'm trying to imagine his face if I told him he was eating pease pudding Grin)

ds has asperger's and can be quite rigid/limited in what he'll eat so getting him to try new things is always 'interesting'

I used to buy something called Tartex, a sort of yeasty veggie paste. Similar texture to peanut butter and quite healthy if I remember correctly. If still available it is from health food shops.

How does he feel about Quorn? I love fake turkey and coleslaw sandwiches, or Quorn roast chickenish bits with mayo and salad. Does he like any vegetables? Roast veg (onions & peppers especially) with hummus or feta, in a wrap, are also really good.
