dh- anything but shellfish
Me- veggie ,no fake meat or rice, no lentils(affects dd3Hmm), trying to diet!
Dd1- eats most things in theory
Dd2- eats virtually nothing
Dd3-BLW so no/minimal salt!

We tend to make 2 variations on the same meal, roast dinner & I don't eat the meat for example.

Well anything vegetarian should do for all you lot I would think? If DD2 eats "virtually nothing", I would assume it's not even worth taking account of her preferences or you would all go hungry, so really as long as it's veggie with no shellfish you'll be fine.

If you came over for dinner I might make:

Pasta with a vegetarian sauce, or with blue cheese and vegetables like broccoli mixed in so the cheese melts and turns into sauce
Ratatouille with couscous
Vegetable tagine
Vegetable lasagna
Curried chickpeas with rice and naan and cucumber raita
Creamed spinach with baked eggs eaten with garlic bread
Creamy scrambled eggs and mushrooms on big rounds of toasted and buttered sourdough
Roast butternut squash and chickpeas dressed with a tahini lemon garlic dressing
Stuffed portobello mushrooms
Portobello mushroom "burgers" and chips

There is a great set of recipes here with a "Vegetarian main dishes" section which I absolutely rely on when veggie friends come round.

I know you say you don't like meat substitutes but I'm assuming you mean things like Quorn by that? Would you eat a nutroast? You could do that for yourself when the others are having a meat roast.

If you go on the Annabel Karmel website there is a recipe for vegetarian lasagne, which I make as a family meal. It's with spinach and mozzarella and is lovely.

HJ Your diet sounds like mine at the moment.

How about some of ours this week,

I've done Butternut Squash risotto.
Pesto and Gnocci with extra bits of pasta for DS to grab onto.
Creamy Spinach and cheese pasta.
Cous Cous, halloumi, pitta bread and salad (you don't have to have the salad).
Frittata with potato croquettes.
Tried DS with fish fingers and brocolli this week.
Macaroni and califlower cheese aka Jamie Oliver is something I've done in the past as well and that went down well.
Baked Potatoe and veggie chilli, get a can of three bean salad from the supermarket, a tin of tomatoes, tomatoe puree, a green pepper and season to taste with some chilli powder and a bit of sugar to offset the acidity of tomatoes.

I love veggie chilli but never manage to make it quite right!

Dd1& I demolish halloumi too.
