I need to use 36 eggs asap... ideas please!

We have eggs coming out of our ears. Don't really want to give them away since one of the aims of having hens was that we'd reduce our food bills. DH and I are having omlettes for dinner but what else can I do. I need baking suggestions that are heavy on the eggs so that I can freeze the results!

Well, cakes is the obvious suggestion then!

How about spaghetti carbonara?

Scrambled eggs (boiled or poached) for breakfast.

Eggs mornay - hard boiled eggs, halved, covered in cheese sauce and baked in the oven. Sprinkle more grated cheese and sliced tomatoes on the top and bake until the cheese is browned.

Meringues (whites) and Easter biscuits (yolks). Meringues keep for ever and Easter biscuits freeze.

I read that you can freeze beaten egg, haven't tried it yet but intend to as we're getting overwhelmed with eggs too.

Other than that, home made pasta, custard, cakes etc etc

You can freeze egg whites on their own, so you could do that and use the yolks to make ice cream (the frozen custard sort).

Or make chocolate mousse cakes/devils food cake/angel cake

Can't sell them. It was suggested on another of my egg threads (to do with generally using more eggs and how many it was healthy to eat in a week) but DH has vetoed on the basis that he's turning into a grumpy old man and doesn't want people stopping outside the house Hmm
Quite annoying on the basis that at a pound a box I could get seven pounds a week towards the shopping bill!!

Don't really want to freeze the eggs/eg whites themselvs on the basis that we get six a day anyway.

The cakes in the River Cafe Cookbook tend to be egg-heavy. There's a Chocolate Oblivion here with 9 eggs, Hazelnut and Ricotta Cake with 8, Pressed Chocolate Cake with 10 and lemon tart with 6 whole eggs and 9 yolks (should you have used the whites for meringues). I've never baked any of them, though. Can you report back if you try any of them out?

Obviously you'd need to make a lot of them. (In my house that wouldn't be a problem). :)

Pancakes?
1 cup eggs (about 4)
1 cup milk
1 cup flour
Pinch of salt

Fill with stewed fruit or chicken/pesto

Freeze well

Crêpes

Victoria Sponge Ingredients
285g Self-raising flour
2.5 teaspoons (12.5ml) Baking powder
285g Margarine
285g Caster Sugar
5 Eggs
Raspberry or Strawberry Jam
Buttercream Ingredients
150g Softened Butter
340g Icing Sugar
3 tablespoons (45ml) Warm water

Cake

  • Sieve the flour and baking powder into a large bowl
  • Add all the other ingredients into the bowl
  • Using an electric whisk beat the ingredients together, starting slowly then medium until you get a smooth, creamy consistency
  • Divide the mixture between the two sandwich tins and bake at 170 degrees centigrade (340 degrees Fahrenheit) for 30-40 minutes. The cake should be springy to the touch.
  • When cooked immediately turn out onto a wire rack.
Buttercream
  • Soften the butter and beat until smooth
  • Gradually add the icing sugar, beating well
  • Add the water and beat until smooth

Spread some jam on one half of the sponge and buttercream on the other and sandwich together. Sieve icing sugar on top

Ooo definitely doing that pressed chocolate cake. It sounds gorgeous (and uses 10 eggs!!)

MmeLindt can I have your five egg victoria sponge recipe?

Would do spaghetti carbonara but I end up with scrambled eggs whenever I try it. I have no idea why!!

Make sure you don't get 'eggbound' as my Grandma used to say Grin...not sure if that's an old wives tale or not.

Maybe do a deal with someone who would take a regular order so you don't have randomns coming round to the house.

Spaghetti Carbonara

Cook spaghetti, drain and set aside in colander with a dash of olive oil to stop it sticking together.

In the same pan fry some bacon cubes in olive oil, add chopped garlic then dump spaghetti on top, mix well.

Crack several eggs - I do one per person but you can do more or less - into a bowl and whisk together with a splash of cream (or milk) and some freshly grated Parmesan cheese. Bit of salt and freshly ground pepper - but go easy on the salt as bacon can be salty.

Pour over the top of the spaghetti, mixing well and serve when it is just beginning to set. You can actually take the pan off the heat once the bacon is cooked as the residual heat of the spaghetti is enough to cook the egg through.

Grate some fresh Parmesan over the top and serve.
