Campervan Cooking for the family

We are going camping in a Campervan this summer, and I want to get a little recipe collection together for doing family meals on two hobs.

I am thinking stirfry, risotto, chilli concarne, etc? Any suggestions or ideas much appreciated as I know it is easy to end up with pretty bland cooking on camping trips [csmile]

if you also used a barbecue you would have tonnes of options. alternatively, if you have salad as your veg then you can do loads of meat on one and your starch on the other....sausages, chicken, pork chops...with or without sauces. do you have electric - if so could you use a slow cooker? curry, sweet and sour - you could include veg in the dish itself. omlette. freeze a couple of dishes and take with you. suggest you look at the camping thread as there are loads on there. mexican wraps, omlette or add pre cooked chicken to bought sauces. carbonnara...loads of things

I think you will be luck to get stir fry on a gas hob in a camper van - sorry but limp sozzeld may be more likely Grin You will nto have the same gas pressure as gas at home.

I do curry, and take a jar of curry paste and a tin of tomato and soem tomato puree - leave to sozzle on the hob and cook the rice in the other pan on the other hob.

Mince and onion with new potatos, carrots and broc.

Pork and cider casserole - we have a microwave and a pressure cooker but I soemtime do pork strogannoff with a mushroom strganoff packet, the dry food packets as they pack away smaller than jars.

Pasta and pesto with bacon and creme frachie

TBH I freeze ahead 5 meals, put two in the freezer and three in the fridge and take with us, this gives a good start and byt hte time we have eaten three meals we can then eat the two in the freezer and then start on the store cupboard food like pasta and pesto.

couscous is great as you just need to add some boiling water/stock (cube) to it and leave it to soak while you sort the bits and bobs that you want to add to it - e.g. pan cooked halloumi, peppers, mushrooms and courgettes, or salad style with tomatoes, cucumber, feta cheese, olives, etc.

Thanks for all the tips. Good point about the gas pressure for a stir fry! I am going to put together a mini recipe file this week.

I have a skillet I use in the camper van - it is great, can cook loads of things in it and uses low gas heat,
Mine is a double one so can use it like an oven, have cooked leg of lamb in it like that or instead stack the pans on top of each other with meat and potatos in one bit and the veg in the other

Also have a box in the van with small jars of spices, chilli flakes, harissa, ginger, garlic etc in so can liven up cooking.
I do meals similar to mentioned above, another tip is cream cheese with garlic and herb makes a great quick pasta sauce, sometimes fry chopped bacon, onion, pepper, courgette etc to go with it

BBQ always good as well
