Recipes for using up milk

Hi all

I have 6 pints of milk to use up (don't ask), have frozen some and would like to use up the rest. I've done a search but nothing came up except rice pudding which I loathe!

Are there any cake recipes which use lots of milk?

Do you like Yorkshire pudding? Clafoutis? Smoothies?

Make some cheese sauce? I think you can freeze it.

Make yorkshires and freeze - they need about 8-10 minutes straight from freezer to reheat.

Don't bother with custard as it tends to separate if only milk (or make it with half milk/half cream and it'll be fine).

Make some smoothies and freeze them in lollipop moulds for the grots (or you!).

Bread and butter pudding - freezes well (if it gets that far!)

White sauce/bechamel/cheese sauces all freeze well.

My milk hogging recipes are:

  • chowder (corn, clam or fish)
  • braising - either pork or lamb braised in milk with bay leaves is lovely
  • boulangere potatoes - and you can put a layer of pork chops or sausages in the middle of the potatoes for a one pot meal

And something very naughty but delicious is milk punch (adults only!) - this may be American as I've never seen it here in the UK but everyone always loves it (perhaps the bourbon is to blame?):

1L of a mixture of whole milk and single cream
350ml bourbon, another whiskey or brandy
110g powdered sugar, sifted
1 tablespoon/20ml vanilla extract
Freshly grated nutmeg, for garnish

Whisk it all together, freeze till slushy, stir up and serve garnished with some grated nutmeg. You can make an ice-cube tray of the mixture as well so you can top it up as it melts without getting too diluted (wouldn't want that!!!) Too bad I'm pregnant or I would have made some of this this weekend to drink in the sun!!!

Make panneer cheese? Just heat it to scalding temp, add some vinegar or lemon juice to curdle it, then stir a tiny bit, cool and drain through cheesecloth or lots of clean j cloths.

I just made butterscotch pudding last week to use up a bunch of milk. I think pudding to me is custard to you. I'm on my way to work (to quit if I can keep my nerve) so I don't have time to convert from American measurements but it's easy to do online.

Butterscotch pudding

4 pints milk
3/4 cup brown sugar
1/4 cornstarch (cornflour?)
3 egg yolks
1 tsp vanilla
2 big knobs butter

Whisk sugar and cornstarch together in a large saucepan. Add all the milk cold and whisk to dissolve sugar and cornstarch. Over medium heat, cook slowly stirring all the time, until it thickens toto point of heavy cream. Beat the egg yolks in a small bowl, slowly drizzle in a bit if the hot milk until the eggs warm up. Then Stir egg yolks into the pan. Put back on heat, cook while stirring until it's thick as mayo. Remove from heat, stir in vanilla and butter. Pour ^in a bowl, cover top with clingfilm directly on surface and refrigerate until chilled.

So. Good.

Thanks all for those ideas. I've made boulangere potatoes, some cheese suce for pasta and its pancakes tonight!
