Cake question

I am making a victoria sponge cake for a picnic tomorrow. I have already baked the sponge. If I assemble it tonight, with fresh whipped cream, woud it keep, or would it be better doing it (slightly rushed) tomorrow?

I would do it tomorrow, the cream might soak in a bit and make it soggy.

Mary Berry recommends adding cream just before serving(if it was a butter cream filling might be more resilient).

Sorry 5 but I too would set the alarm 5 minutes earlier and do it in the morning.

How hot is it with you?

How far do you have to travel?

Could you take the cream etc in a pot and do it there? I have had cream sponge disasters where I have arrived and the top has slid off the bottom in the heat.

Carrots, it is raining here as well, so maybe no picnic tomorrow. Not travelling far luckily, just have a lot to do beforehand.

you can whip the cream tonight and keep it in the fridge, then just put it on the cake in the morning. That will save you a bit of time

My sister has suggested putting some icing sugar in the cream before I whisk, would that work?

I little bit of icing sugar sweetens it a little. I also put a little vanilla extract if you like it - only a little though.

I have picniced in the rain 5 and it was a great laugh. Just dress appropriately so you are not cold and damp.

My dcs enjoyed it so much they ask to do it again often.

And it is glorious here now so it might come your way by morning. [hopeful emoticon]

I would, but Ds2 has austism and does not venture out in the rain. We can still have on on the living room floor if its raining.

Ah yes, that could mean a change of plan then. We picniced today on the kitchen floor as ds didn't want to leave his Lego [buhmm]
