What does anyone cook bar sausages, steaks and burgers? Would anyone like to share some family/young child friendly meals from the barby please?

I'd also give you the recipe for the one and only Morebounce Pickle Burger (with integral layer of gherkins inside the burger) but apparantly no one likes pickled gherkins as much as me Sad.

DH is a big fan of the Juicy Lucy burger (integral layer of plastic cheese), as seen on Man vs Food, which is always a ringing endorsement!

we make quesadillas: blitz butter beans, clove garlic, pinch of cumin, juice of half a lime to a puree. Spread over half a tortilla wrap. Then chop handful of coriander, 2 toms, 1 spring onion, tablesp of jalapenos. Spread this over the puree. Then add some grated cheese. Fold the tortilla over and press. Cook on BBq not long (2 mins?) on each side. Yummy.

  • Pizza (plop my pizza stone on the grills and put the pizzas on top)
  • pasta sauce (in a foil container, I put halved cherry tomatoes, minced garkic, EVOO, salt and pepper and put in BBQ to cook alongside whatever else I am cooking). Eat as starter over pasta/rice or save for another time
  • fish (have one of those grill baskets)
  • brochettes
  • butterflied whole chicken (marinade in EVOO, lemon juice and zest, garlic, S&P) and agree with the cooking first in oven
  • foil parcels of food (finely chopped, delicate things like chicken breasts with a splash of wine, chopped veg, fresh herbs)

Leg of lamb butterflied - moroccan herbs for a change if people over with lots of yummy sides
Small lamb chops perfectly pink
Whole fish in foil - trout, etc
Heat up some chocolate at the end and dip fruit - yummy and messy
Tbh if it's nice enough weather for a bbq then who cares what you eat!

Big mushrooms filled with sweet chili sauce and blue cheese- sounds odd but it works.
Have in the past done slices of pineapple on the bbq and dipped into chili salt-that was nice
Slices of aubergine marinate d in olive oil and garlic
Make burgers and chop chili through them or put blue cheese in the middle of them

I make a lush salad with four ingredients:

1 x ripe mango in chunks
2 x ripe avocado in chunks
1 x small red onion in small dice
2 x red pepper diced

Stir - serve with barbeque meats!

We've just had a very pleasant BBQ this afternoon, enjoying the sunshine, and one of DDs friends to make it more of a party !

We're veggie though and I wish there were more interesting choices in the supermarket. We had some quorn escalopes today with a layer of gruyere cheese ready incorporated, some "lincolnshire" veggie sausages with salad and mayonnaise in a baguette. We also fried some onions which was a nice addition.

Thinking might be good for future BBQ's to have a go at making our own veggie burgers, incorporating nuts and lentils etc. Does anyone have a good recipe for a nutty veggie burger ? Have looked on MN recipes and don't think there's really anything there along those lines.

Grilled halloumi sounds like it could be worth a try, and we've had a go with veggie kebabs and sweet corn on previous occasions.

  • Quite fancy those grilled pineapple slices, piebald, as pineapple is a favourite around here, and bananas with chocolate in tin foil would bring back happy memories Wink

My DH and family are South African and when we BBQ we actually 'braai' - and anything goes. Spuds and meilies (sweetcorn/corn-on-the-cob) in fact all vegetables can be wrapped in foil, or not, and put on the grill.

If you have to use an oven to precook, well it's just not a braai Grin

I sometimes cheat though...if I can get away with it

Greek kebabs (gyros) are my fave food in the whole world:

Belly pork kebabs, brushed with lots of olive oil and lemon juice.

Toast a pitta bread on the barbeque.

Lay pitta bread flat and add tomato and onion salad and tzatziki. Add a pork kebab, wrap pitta bread around and pull out skewer.

Eat with a lot of napkins on standby.

Repeat until can only waddle. Must be accompanied by ice cold retsina.

We have moved away from our wonderful friends who do brazilian bbqs...FAB!!

basically all meat gets cut into strips for everyone to share, including steak, nice sausages, halloumi, pork belly etc.

then add french bread stick and tomato and onion salad!

We've got BBQ whole chickens for Easter dinner tomorrow. Kettle (Weber) BBQ with a lid on, coals arrange down the sides + drip tray to catch the juices.... 1 1/2 - 2 hours and they are smoke-tastic fabulous.

You need to make these in advance and they have to be cooked on foil rather than on a grill rack.

Makes 2 good-size burgers

4oz cooked beans or chickpeas
2 spring onions, finely chopped
clove garlic, crushed
Heaped tablespoon rolled oats
Tablespoon grated carrot
Tablespoon pumpkin seeds (any seed or nut works well)
1 egg, beaten
Chilli flakes, chopped herbs and other seasoning

Using a small food processor, chop up or mash the beans, onions & garlic until you have a breadcrumb consistency. Add the rest of the ingredients plus the beaten egg and mix well. Now set aside the mixture for at least an hour so that the egg is absorbed by the other ingredients. Wet your hands and form into patty shapes... you can dip them in sesame seeds or flour at the end for extra texture.

Place the burgers on oiled foil and cook for about 5 minutes until they have firmed up. Turn over and cook the other side.

Has been a good day for chilling in the garden, ( I've been sitting out with my DS in gentle rocking chair, under shade of our apple trees ) - Or for BBQ's I imagine for those with slightly more energy to make something good happen !

Misshospitalcorners Haven't heard the word braai for ages! I grew up in SA, and braais were a regular thing in the summer. They were much better there than they are here though.

Fresh caught mackerel fillets, slow cooked in a kettle bbq with the lid on. I add whiskey barrel chippings and sometimes applewood chippings to the charcoal for flavour and throw in a couple of bulbs of garlic on the charcoal for the last five minutes cooking time. Top of with strong cheedar cheese then straight into a burger bap.

Whole beef joints are gorgeous cooked on a bbq, nothing other than salt, pepper and a bit of olive oil, chuck it on the bbq and let it sit there for 40 mins or so (turn it a couple of times during cooking). Mmm
