Buffets - what goes down well and what always gets left?

I'm doing a buffet for about 60 in a month, was thinking of the usual cooked meats, bread, jackets, various salads, cheeses, sausages etc, but I need a bit of inspiration to stop it being my usual boring fare.

sausage rolls are awful and always get left..dry flakey yukky things
and if you are doing sausages how about getting some really tasty ones from a butcher (pork and apple or sweet chilli etc) and cook them then put them out hot or cold
the horrible wien sausages in packets precooked are hardly proper meat at all and taste it!

Will the food have to be cold or do you have access to cooker for hot buffet food?

Second chipolatas cooked and then rolled in a glaze of wholegrain mustard and honey. Will keep warm for ages if wrapped in lots of foil.

Green salad tends to get left in my limited experience as people seem to pefer easily pickable, mouthful things and lettuce is a bit of an effort if balancing a plate or talking while eating. Greek salad or guacamole salad (black eyed beans, avocado, tomato, cucumber in a lemon dressing) seems to do better when I've done buffets?

Poached/grilled salmon are great because you can cut it with the side of a fork.

Quiche is endlessly adaptable and you can make it veggie or not, as well as being easy to portion out and eat with just a fork.

Chicken drumsticks that can be eaten with one hand (chicken wings need 2 hands and chicken breasts need a knife). Also chicken salad - nice with a creamy tarragon dressing and bite-sized chunks of chicken. (If you're catering for a crowd, chicken is often the safest option!)

Agree with Morebounce, green salad which is not bite-sized is too difficult and unwieldy - bean or rice salad is always easier to eat, and you can replace the rice with orzo pasta. Could do a shredded salad of carrots/beets/fennel. In the summer sweetcorn salad is lovely. Or mangetout with sesame seeds.

Ham (nice) always goes well here.
And - Crusty bread, Little sausages, Chicken wings/drummers, Homemade potato or pasta salad

I think cheap pizza is minging so I always leave that.

Home made coleslaw always goes down well and is super quick to make and much tastier than shop bought :)

how about a watermelon and feta salad ? that goes down really well with some couscous (cheap & really easy) and some greek salad.
Then some fish or lamb, some crusty bread and cheeses and you're done.
I avoid anything creamy, or cheap pizzas / sausage rolls
but my boys always love a chinese nibble (spring roll/wanton etc)
