I've decided to be brave and try making a quiche.
I have loads of cook books but none have a recipe for quiche.
There are loads on the internet, but I wondered if people would be kind enough to share their favourites and the ones that worked the best. (please remember I'm a novice Wink ).

My favourite homemade one is caramlised onion and feta with filo pastry.
Happy to post the recipe if you like the sound of it.

mmm mushroom and spinach...

My faves are a caramelised onion and goats cheese quiche that i got from the sainsbos website (on phone so cant link to it) or delia has a nice plain mushroom one where u make a paste called duxelles first, bit of work but yummy.

Here's mine:

Make pastry. Bake blind.

Cook veg (usually courgette, peppers, onion/spring onion, a few halved cherry toms in at the end). Chop some bacon and quickly fry it.

Bung Arrange veg and bacon in pastry case.

Whisk together 4 eggs, 300ml-ish double or whipping cream, some grated cheese (maybe a handful or so -- cheddar/gruyere/parmesan), salt and pepper, chives.

Pour egg mixture over veg. Bit of grated cheese on top.

Bake at around 170C until set in the middle (usually 30 - 40 mins).

Also works well with broccoli (cut v small and stir-fry for 5 mins or so), leeks and smoked salmon trimmings.

I always bake blind the pastry, then with pastry brush paint the quiche pastry case with a bit of the beaten egg mix and pop back in oven for 5 minutes.

Then add filling and cook. The egg layer sets andd seals the pastry, and stops the mix soaking in. No more grey pastry or soggy bottom.

I always do good old smoked bacon and chopped onion. Then cheddar and chopped tomato slices on top.

Assuming you don't need the pastry/blind bake bit as Toby has kindly given you a recipe for that bit, I do finely sliced leeks, sauteed in butter with a little salt and a good amount of pepper. Put those into your egg/cream mix and then add lots of grated gruyer. Delish. The quiche is a much melined (sp?) thing. A soggy supermarket, flavourless, uninspired, possibly once frozen quiche that has lived and died on a buffet table is not comparable in any way shape or form to a freshly baked, room temp, home made, soft inside, golden crusted piece of quiche perfection. Can you tell I've had a glass of wine?????

Caffinated - delicious!

Caramelised Onion Quiche

Melted butter for greasing
2 Tablespoon extra virgin olive oil
3 onions sliced thinly
1 garlic clove finely chopped
1 tablespoon finely chopped rosemary
2 tablespoon sugar
2 tablespoon white Balsamic vinegar
8 sheets filo pastry
100g melted butter
4 eggs
300ml sour cream
100g feta crumbled

1 Preheat oven to 180deg C. Brush a lamington tin with butter. Heat oil in heavy based pan. Add onion,garlic and rosemary, cook over low heat, stirring occasionally, for 15 mins.

2 Add sugar and vinegar stir until sugar dissolved. Cook stirring occasionally for 10 mins until golden brown.

3 Brush 5 sheets filo with butter and layer them all lenghways in dish as you go allowing pastry to hang over sides. Brush remaining filo and fit crossways .

4 Spread onion mixture evenly over base. Whisk eggs and cream season well. Pour over onion layer. Crumble feta finely over top. Roll pastry edges in to form border

5 Bake for 45-50 min

I bake a pastry case blind. Meanwhile caramelise some onions and a bit of garlic. Shove them onto the part baked case. Cover with grated strong cheddar, or tiny cubes of gruyere. Egg and cream mix with a bit of grainy mustard, s&p and some fresh rosemary or thyme. Pour it over. Cook until done. Or I do the same but with gently sauteed leeks instead of the onions.

and if you find that in your rush in the supermarket you pick up puff pastry instead of shortcrust it actually still works. Blush

Puffy quiche is now a family favourite! Grin

first attempt at a quiche yesterday - made a version of dickcheeseandthecrackers's Caramlised Onion one but made shortcrust pastry and used 200ml single cream (because I accidentally bought single instead of double) and 200ml creme fraiche (becasue I saw another recipe with this in and wanted to lower the fat content) instead - was lovely for my first go even if i do say so myself!

The pastry is a bit dry and I think I could've done with whisking the mixture a bit more but I liked it!
