Goose eggs?

Have been given 2 by a neighbour. I was expecting duck eggs, which I have been told make great cakes and are lovely as per hens' eggs, eg: soft-boiled. Anyone know if goose eggs are ok eaten the same way?

You can eat them with soldiers, soft boiled, but they are 3-4 times the size of chicken's eggs so you have to like soft boiled eggs a lot,

Other than that, you can scramble them, make omelette, hard boil for salad or use in baking. Remember an average hen's egg weighs 2oz so you can work out how much goose egg you need by weighing it.

You can puncture each end of the egg and blow to get the egg out if you want, then you can paint, dye and decorate the shell for Easter.

We kept Chinese geese when I was a child. I don't remember ever having the eggs boiled, but Mum did make omelettes with them and gorgeous cakes - they were darker than hens' egg cakes, more orange than yellow, but tasted great.
