vegetarians - sandwich/lunch ideas please

DH doesn't eat meat, and I rarely do nowadays as I am fussy about it being organic/free range and as this is so hard to source locally the meat is slowly but surely disappearing from my diet on a permanent basis.

Main meals we have pretty much covered (DH is a fantatsic cook, i'm still learning)

It's the sandwich/lunch thing which i'm really struggling with. I seem to be stuck in a rut of cheese with various home-made chutneys or pickles and this week have been hankering for a ham sandwich just for some variety!

What are your cupboard standbys for light lunches (without too much prep involved) and sandwich fillings?

Sandwiches:
Mozz & pesto
Brie & cranberry

Boursin, cucumber & avocado

Grilled portobello mushroom & mustard (like a steak sandwich but juicier) - can add goat's cheese or boursin as well

Grilled halloumi & roast peppers from a jar
Egg and cress

If DH eats fish, a couple more:
Smoked salmon, cucumber & soft cheese
Tinned tuna or salmon with a little mayo, lemon juice, chopped salad onion, dill and celery (I don't like it with sweetcorn but I know lots do)

bike we're both allergic to blue cheese but could substitute with a different cheese.

He doesn't like avocado, but he's only here for lunch three days a week so it's something I can have when i'm on my own.

and tyel we used to eat portobello mushrooms a lot, don't know why I didn't think of that!

i like egg mayo (bit stinky for work though) but i do them like this

layer of brown bread with salad on, lettuce (often rocket) sliced toms, cucumber and beetroot, another layer of bread then egg mayo and another layer of bread. doing it like this means it doesnt slide all over. i also sometimes mix primula into the egg mayo.

i also love pittas filled with grated cheese and carrot

Omelettes and salad

Pitta bread, halloumi, red chilli, salad

Hoummus, pitta, carrots, cucumber

Baked camembert with celery, radishes and crusty bread

Tsatziki, pitta, crudites, olives

Crepes with what ever filling you want (spinash and eggs, cheese)
mini pizza? favorite is home made tomato sauce, mozzarella, black olives and artichokes
pasta salads
apple/ celery/eggs salads with a muffin for desert

I spread a bit of hummous on brown bread instead of butter, along with mild cheese (eg mozzarella), lots of salad & black pepper.

jacket potato, topped with leftover bean chilli or veg curry
grilled mushrooms and halloumi cheese in a crusty roll (amazing with lashings of nandos sauce)
veggie burger in a bun
pasta with pesto and black olives
mushroom, onion and cheddar quesadilla
mushrooms, peppers and onion fried in a little chilli powder and served with avocado in a tortilla wrap
noodles, bean sprouts and tofu
chickpea salad
cous cous salad

sandwiches:
grated carrot, hummus and rocket
mozzarella, tomato with pesto instead of butter
grilled courgette, pepper and aubergine (normally only when leftover from making lasagna the night before!)

I don't eat loads of meat and I'm very lazy, so for lunch I generally take leftovers of whatever I had for dinner the night before. Lots of veg and pulse curries, stews, soups, pasta and sauce is nice just eaten cold the next day. Sometimes I'll make quiche or pasties/pies, today I made some hummus and had that with pitta and carrot sticks.
