Next week we are having a party to celebrate our anniversary-we have been married 5 years

My uncle is coming and he is a vegan and ive not had to cater for him before and dont know what to do, i dont want to ask him because he always says "oh i,ll just make do" whenever my mum has catered for him before.

I want to do something nice for him because him and my aunty have really helped me out this year with DS.

Please can anyone offer suggestions

TIA

Doh, I read this thread title too quickly and thought it said "Vegas" food, I thought this is going to be a great party!

Happy anniversary BTW

is it finger food, a hot sit-down, a main meal buffet or what?

If you have a waitrose near you they do crayves cakes, muffins etc, some of which are suitable for vegans and they are delicious!

Rice salad (with kidney beans, sweetcorn and stuff in), breadsticks or pitta breads with houmous? Tortilla wraps with refried beans and salsa?

Hmm..lots of good suggestions here already

I would do him marinated mushrooms, button and field and some small dried ones like porcini or morrels and as has been suggested a brown rice salad with kidney beans an cucumber and a herb vinagrette, and a guacomale and hummous dip with vegan bread sticks and for pudding a cheesecake made of silken tofu and with a hazelnut base

Will get my thinking cap on and try and come up wiht links to recipes a bit later, but there are so many good suggestions on here already.

vegan "cheesecake" here

if you can't get oatmeal, use ordinary porridge oats but give them a very quick whiz in the blender first and you could take out an ounce of flour and put in an ounce of ground hazelnuts instead. Doesn't have to be bananas either, frozen berries sweetened with a little icing sugar would be nice spread on top after baking

mushrooms here you could dress it up with some chopped basil as a garnish and reduce the stock until very thick and gravy like. If you use dried porcini mushrooms - would probably use only 25g, soak them in hot water for 30 minutes and use the water for your stock, this gives a nice intense flavour, and mushrooms are like steak for vegans - poor buggers

Hi jenk, we always seem to meet on the food threads! It's my anniversary next week as well

I have a few dishes which I do when vegans are coming and they usually seem quite popular with veggies and meat eaters too, so don't assume that you only need to make enough for the vegans.

Roasted vegetables: aubergine, courgette, peppers, butternut squash, mushrooms, etc. Cut into strips and drizzle with olive oil. Roast in an oven dish, turning occasionally, until tender and starting to crisp at the edges. Serve with marinated, grilled cubes of tofu (marinate in soya sauce or any favourite marinade). It's good hot or cold. If served cold I usually splash a bit of balsamic vinegar over the top. If I was serving this as a family meal I would cook quinoa or rice to go with it.

Health food shops usually have vegan pesto (with no parmesan cheese in) which is lovely mixed with cooked cold rice to make a rice salad.

A special mixed salad with interesting leaves like baby spinach, rocket etc., with any or all of the following: avocado, chickpeas, sun-dried tomatoes, artichoke hearts, new potatoes, sunflower and pumpkin seeds.

For dessert, fruit dipped in vegan chocolate (Plamil, or many types dark chocolate with high cocoa solids, just check the label to see they have no milk in) is yummy. Goodness Direct do vegan muffins as well - Zedz.

I think that's more than enough of my ideas but I will tell you if I think of anything else especially nice. Hope you have a great day!

our friends had a completely vegan buffet for their wedding and few people noticed it didnt have meat. aswell as rice salady stuff, you could have crusty bread and houmus to dip, felafel (am told its quite easy to make, lots of recipes on google) and veggie samosas mmmmm
