cous cous ideas please..

thanks to DonaAna for suggestion on the other post i want to try DS (nearly 8 months) on some cous cous - its so quick i understand but i usually buy that tesco finest salady stuff as its all flavoured for me.

Can anyone share some yummy things to do with cous cous? especially with summer salad season coming up!

I usually do mine with lemon juice and parsley.

Or very finely cubed peppers and chilli oil.

A lot of people put fruit (sultanas or dried apricots seem to be a favourite) in it, but fruit and savoury is wrong Grin

I fry up some chopped garlic, halved cherry tomatoes and diced red pepper in olive oil till it turns into a rough mush, then stir into the cous cous.

Yum.

Also good with aubergine. And parsley, and toasted pine nuts.

My favourite cous cous recipe is cous cous with roasted cubes of butternut squash, courgette and feta, all dressed in a honey and wholegrain mustard dressing, with some chopped parsley if I have any in. Served warm or at room temperature.

Obviously you may want to tweak this to suit your DS, maybe replacing the feta with a less salty cheese, maybe mozzarella?

Traditional tabbouleh is fab, this is usually made with bulgar wheat, but I like it with cous cous too. It's pretty much equal quantities of chopped deseeded tomato, cucumber, spring onion, grain of choice and parsley with an olive oil and lemon dressing.

And while I'm all about ham and pineapple, roast meat and fruit sauce, etc, I agree with Toby that sultanas etc plus couc cous is yuck.

i disgree about sweet and savory though - i love all that stuff. Cranberry sauce, apple sauce, cider in my gravy, ham and pineapple pizza, oh and the ULTIMATE Cheese Pineapple and pickled onions on sticks - yum

Does couscous keep good or do you have to be very careful like with rice?

Couscous gets hard and not great tasting if you put it in the fridge. Second couscous in tabbouleh. I think Nigella's How to Eat has a great recipe (with lots of balsamic vinegar). Everyone I've ever served it to has liked it.

Couscous tends to get hard and dry if you put in the fridge. As it's so easy to prepare, I'd try to make a quantity that can be consumed in one meal. So it doesn't get dangerous but nobody in my house wants to eat it the next day.

Tagines are great with couscous - I love a good chicken tagine with saffron and olives. I also had a yummy Moroccan pork recipe with cinnamon and dried apricots that was great with couscous - try googling.

My children prefer couscous plain, with a drizzle of olive oil.

i usually just caramelise an onion and through it in. Great with salmon or lamb casserole
