If you were going to make a steamed sponge pudding in the pressure cooker, how long would you do it for?

And is it a good idea to try? I was thinking maybe 30 mins as normally I'd do it for 1.5 hours.

I don't recommend it - I have tried it myself just this week when my much beloved old saucepan gave up the ghost (used to stick a weight on the lid).

You're meant to start steamed puddings slowly in the pressure cooker to allow the raising agent to work before the nuking begins. I did 20 mins without the weight on and about 30 with the weight on...... and it came out like a hard lump and had hardly raised at all.

I tried again with no weight and a lowish heat for the normal 1.5 or 2 hours and it came out much better - basically treated the pressure cooker as if it was a normal saucepan!

Steamed puddings seem to prefer a gentler treatment.

If you have better luck please update me!

Oooooo, maybe I should think again. Any other pressure cooker puddings I could try?
