Easy and mild curry recipes?

I'd like to make a curry with chicken, prawn or vegetables as the main ingredient, and I'd like it to be mild (sorry to be boring!).

Does anyone have any good tried and tested recipes along those lines; I'd also be interested in a biriyani recipe too if anyone has one.

have you tried patak's curry pastes? or are you looking for something more advanced from scratch - in which case count me out. jamie oliver's pollock curry one is lovely - korma paste and coconut milk - could dig quanitites out if you are interested - it was on a conserving fish stocks prog they did recently so you might be able to google

Another fan of Pataks curry pastes here.

For mild but actually not fruity search online for Nigellas quick prawn curry. Main ingredients red thai curry paste (use less for less spicy!), coconut milk, sweet potato, butternut squash, prawns, mango. Very tasty.

I use curry pastes too. Or sometimes those sets you can buy in the supermarket with pre-measured doses of different spices in little plastic pots - they have a recipe on the back. I think they are better than the pastes but they are a bit expensive.

DD (age 3) likes this recipe for a mild vegetable curry:

Soften chopped onions in a frying pan with oil, then add a couple of big spoonfuls of curry paste (eg korma paste) and some grated ginger, cook for a few minutes then add a tin of coconut milk and a tin of chopped tomatoes. Turn down the heat, add chopped veg of your choice (we like cauliflower, potato and green beans, but you could use anything.) Simmer for about half an hour, then serve, with a squeeze of lemon juice over the top and some chopped coriander leaves. I sometimes add a handful of spinach towards the end too and just let it wilt - and DD likes it when I add a handful of sultanas or raisins midway through, but they do make it taste quite sweet.

Thanks, I've bought a pataks korma paste for tonight to use with some chicken, and I'll give the veg curry from tabitha a go next week. Jamie's recipe sounds interesting too, but DP might take some persuading about the fruit in the Nigella one!
