Stuffed peppers-what do you stuff them with?

Title says it all really! Have tried before with rice and cheese and it was a disaster! Does anyone have any good recipes please?

I always use cous cous.
I cheat and get the Ainsley Harriott packet mixes, they are really tasty.
I half the peppers (I only ever use red ones, as they are sweeter) and bung them in the oven for about 20 mins. Then I make up the cous cous, it doesn't take long, about five minutes.
Then fill the peppers, and grate some cheese over the top.
bake for about ten minutes, or until the cheese has melted and started to brown, and voila!
Delicious.

I always halve the peppers through the stalk, so they keep their shape when baking. Chunks of feta, chopped olives, red onion and herbs with a splash of olive oil is very nice; or, halve some red peppers then put two quarters of tomato into each half, along with chopped garlic, basil and a fair bit of olive oil. I nicked that from Delia, it's calorific but really tasty, especially with some nice bread to mop up the garlicky oil.

We have done it a few times stuffed with a different colour pepper cut in chunks, mixed with houlloumi and pine nuts and olive oil. Very tasty. I think I'll mix in some couscous next time as well, or serve it on couscous.

I also cheat and use the AH cous cous packets - I fry some onion, chopped peppers etc then mix them into the prepared cous cous, shove cheese on top and bake.

Another brilliant one is to stuff long thin red peppers with some feta that has been mashed with some chopped red onion, lemon juice, olive oil and herbs.

I also cheat and use Ainsley's cous cous. Like everyone else, I halve the peppers leaving the stalk in, drizzle all halves with olive oil, season and bung in the oven for 20 mins. I fry some onion and mushrooms (chopped small) off and add this to the cous cous, I also put some goats cheese into each pepper too.

I then put them back in the oven to warm through for 15 mins befor we are due to eat.

cous cous in stock is yum - or anything really! You could pop little bits of ham in, rice with chilli is tasty, or even a big mix of spinach, mozzarella and other sweeter peppers.

Made a very successful stuffing for peppers a few weeks ago.

Whizzed up some old stale bread in the food mixer to make breadcrumbs, then shallow fried the crrumbs in butter with lots of garlic and parsley until crispy. Then used yhe mixer to whizz together a ball of mozzarella and some sun blush tomatoes ( the kind that are preserved in oil in a jar). Stirred the breadcrumbs into the mozzarella mixture and then used it to stuff miniature orange peppers. Placed on an oiled tray and baked for about 20 minutes.
Very tasty.

Would work well with other veg too, eg courgettes or mushrooms as the mix holds together quite well.

I do it like HopeForTheBest but with all sorts of starches/grains: bread, cous cous, rice (both brown and white), cracked wheat and quinoa. Instead of minced meat I often start with some crumbled sausage and onions in a frying pan, throw in some pine nuts and raisins when the sausage is mostly cooked, and then mix in the cooked grains so they soak up all the sausage fat. Then pack into peppers (I always cut their tops off and hollow out, and dice the tops and mix in with the onions). Cheese on top, tomato sauce in the pan, bake quite hot until peppers are soft and cheese is melted (as meat is already cooked).

I can always find a way to make a healthy meal not so healthy!

minced pork and rice and then served with (a small amount) of tomato and marscapone (can't spell it!!) sauce. DD most favourite meal in the world.

I do quinoa, boiled with stock, onions and mushrooms, then when it's cooked add in cubed cheese and pack into the peppers - prepared as astarwithherownways describes. Serve with tomatoey sauce or sausages or grilled chops or salad or whatever!
