Hummus making advice needed...pretty please.

My dd keeps asking me to make hummus for her, so I thought I would do a batch for us all. All the recipes I have seen add lemon juice. I can't eat it because of migraine, so I was just wondering if it is an essential and if not do I need to add something else instead?

If you have a nice recipe without lemon please share it with me.

Couldn't you just do some without lemon for you, remove your portion from the blender and then add the lemon to the remainder for everyone else?
I don't think there's any alternative to lemon juice - maybe try vinegar but it might be horrible...

you could try lime juice but it won't be the same as lemon juice is a key ingredient

from memory its a tin of chickpeas (drained), two cloves of garlic, approx half a lemon juice, some paprika and tahini. I just blend it up and then keep adding olive oil until its the right consistency - what ever consistency you want - and then add salt & pepper to taste. Go light on the paprika as you can ruin it by making it too spicy and you can always add in more later.

Thanks for your replies. I can't have any citrus so limes out I'm afraid. I will try it without the lemon and see what it's like then add if needed for the kids. I jst wasn't sure what a difference the lemon made.

I'm allergic to oranges but not lemons, you could add tamari it has a nice flavour and saltiness without being too salty. i also make a dip (like houmous0 but with haricot beans 'cos Im also allergic to chickpeas.

Could you try adding a little sumac to it? That gives a slightly lemony flavour - but no relation to citrus fruits (I don't think?). I've never tried it in houmous though, so don't know for sure that it would work.

Apparently, the key to making a good houmous is not to use a health food shop tahini (as they often don't hull the sesame seeds) - Cypressa seems to work, and apparently the Al'Fez tahini makes lovely hummus, but I haven't managed to get my hands on that one yet.

If it comes up rather thicker than you're expecting - homemade, it often does - you can mix in some water as well as the olive oil to make it more like a supermarket consistency.
