Lunch party pudding

We're having a 'Christening' party for DS3, where family and friends will gather to celebrate his birth (10 months ago, but these things are traditionally late) in a not going to church sort of way.

We're having cheese straws out of a packet for canapes (because I'm classy like that), no starter (as above) then a whole poached salmon, new potatoes and salad, with an onion tart for veggies. And lots of fizzy wine.

What shall we have for pudding? There'll be upwards of 20 of us, fairly evenly dispersed between 0 and 60, so must be capable of doing large numbers ideally without too much effort. If I can make it the day before, even better.

how about poached pears - very easy, do in advance.

and cake. you can't go wrong with cake.

or chocolate brownies with cream and some fruit.

We had DC3's christening yesterday. Did light lunch for thirty. Puddings were cheesecake (condensed milk and philadelphia version is v. easy with fresh raspberries on top), home made pavlova with summer fruits and french apple tart (just puff pastry sheet with apricot conserve and sliced apples).......

I would do a mxture of two or three out of
rhubarb fool with home made ginger biscuits
trifle
pavlova
ice-cream with either chocolate sauce or fruit compote
chocolate mousse
fruit salad
sticky ginger cake
almond cake
fairy cakes with stuff by the side so that the children could decorate them themselves

Be careful with the salmon. I once did a whole poached salmon plus new potatoes and salad for 8 adults and 6 kids aged 6-8 and it was only just enough.

Thanks! I think it's going to be rhubarb pavlova (is that too wierd?) and brownies. We've got rhubarb in the garden, and I can ask my mum to make the meringue bits. And brownies are a day before doddle.

The salmon will be about a metre long, crystal, the last time I did one like that it lasted WEEKS.
