Interesting Lamb

Have a few friends coming over tonight and have bought a leg of lamb in the hope of doing a roast, unfortunatly the extent of my cooking abilites end at fish and chip (frozen variety).
Got a whole lot of veg and live next to Tesco (and next door to Marks and Spencer) and would realy like something to make it a little bit special.
Hopfully someone has a few ideas.

you can't go far wrong with lamb unless you overcook it.

try poking holes in the lamb with a knife and poking in bits of fresh rosemary and/or whole peeled cloves of garlic. slap on a bit of oil, then roast in a lowish oven (gas 5, 180 or so) for 20-25 mins per pound (20 leaves it a bit pink).

If you don't mind cleaning, you can roast it straight on the oven shelf, with the potatoes below, so the juices and fat drip over the potatoes. If it's a half leg of lamb you'll need to put the potatoes in before the meat.

mmmm. it's very hard to buy lamb here. I miss it.

also, stick some whole fat carrots in with the potatoes. you can boil the potatoes first for 5 mins (makes them a bit crisper, but not necessary if you're going to cook them in the meat fat), but not the carrots.

Here's one idea- v easy Jamie Oliver recipe that you could do- needs no cooking ability whatsoever just long slow cooking. I cooked it for my Dad last weekend and it was dead easy and yummy.

1 large leg lamb
salt and pepper
olive oil
6 rashers of thick streaky bacon
3 red onions peeled and quartered
3 cloves garlic peeled and sliced
2 good handfuls of mixed herbs- thyme, rosemary, bay
4 large potatoes peeled and cut into chunks
1 celeriac peeled and cut into chunks
6 large carrots scrubbed and halved
3 parsnips scrubbed and halved
1 bottle of white wine

Preheat oven to gas mark 3/170degreesC/325degreesF.

Season the lamb well with the salt and pepper.

In large casserole pot or deep sided roasting tray fry the lamb in a couple of good lugs of olive oil until brown on all sides.

Add the bacon, onions & garlic and continue to fry for 3 more minutes

Throw in the herbs and veg, pour in your wine plus the same amount of water.

Bring to the boil then tightly cover with kitchen foil

Bake for 5 hours until tender and season the cooking liquor to taste.

Serve lamb and veg with some crusty bread to mop up gravy.

Those sound great thanks. It's making hungry just thinking of it, that maybe or it is lunch time and I have a firdge full of food that I can't eat.
