home made pot noodle lunch

Ok so I'm a bit fed up with sandwiches. Since becoming a SAHM I have got a bit stuck in a rut with lunch ideas, but definitely can't be arsed to cook a full-on hot meal every lunch time.
I had a Waitrose own brand version one of those Innocent Veg Pots the other day - a chicken and noodle one and it was yum. It felt much more nourishing and healthy than what I normally eat.
So... I decided I wanted to make my own, using a mixture of fresh and storecupboard ingredients, and using a microwave - no pans to wash up. I know this isn't exactly revolutionary, btw, but here is version one - if anyone's interested. It was very tasty, and ds (3y) liked it too, especially as he got to eat it with his kiddy chopsticks!

1 portion fine straight-to-wok noodles
grated: ginger, garlic, half a carrot
sweetcorn, fresh or tinned beansprouts, some leaves (I used baby spinach)
1 sachet miso paste
1 spring onion, snipped
squeeze of lime juice
shredded cold leftover roast chicken

Pour on boiling water, stir, and microwave on full for 3 mins

I added a sprinkle of sweet chilli sauce and a bit of soy to mine. Really yummy, and warming on a rainy day.

We do this all the time too. Smile

Normally use the dirt cheap instant noodles just discarding the sachet of crap flavouring and putting ours own stuff on it.

Often ginger, garlic, spinach, mushrooms, spring onions, frozen peas, chilli etc...all of these, and the noodles can cook just by pouring over boiling water and covering (if chopped finely) them we just season with tamari, lime, corriander.

Quick cheap and yum! Grin

We do this too, though in a pan as I don't have a micro. I also use the cheapo noodles and throw the sachet away.
It's a really nice and quick meal.

I like mine with lots of chilli, kecap manis and lime juice.

i have just discovered this and have been having it for the last 2 weeks!
only takes minutes on the hob.
i use striaght to wok noodles (really cheap in home baragin), soysauce, pepper, chillis, ginger then add whatever veg i have lying around, sweetcorn, peas, mushrooms, anything goes. very healthy too!

Yes it's great. I might try a Moroccan version next, with couscous instead of the noodles, and using harissa paste.
