Ideas for easy peasy wheat free mid week after work dinner for 6

I'm cooking on Thurs night. Will be getting in about 6pm and need something on the table by 7pm.

What can I make that's tasty, quick and easy that isn't curry or bolognaise or chilli? Oh and wheat free.

Puy lentils, salmon and broccoli - pre boil the broccoli and stir fry it in some chilli and garlic - delicious!

I'm planning to do Nigella's Spanish chicken and chorizo (google it, it's fab) for my Gluten free mother later this week but you'd need a little over an hour.

Chicken marinading the the fridge all day in cream, mango chutney and curry powder? 40 mins in oven and served with rice and green veg.

Tassissss, Nigella's chicken is yummy.

If you have more time then you should try Delia's basque chicken. Excellent and very easy one pot dish.

Hmm, that spanish chicken looks interesting. What's the deal with doing it two separate dishes though, why can't they be cooked in the same pan? Confused

bunjies, I do it in 2 dishes as it's quite a lot of potato/chicken etc and it fits into 2 dishes nicely. I then tip it all into one (sometimes a clean one) for serving at the table. It really is very, very tasty and my kids love it too. Leftovers are delish if there ever are any!

So, it's just a size of tin issue? I am tempted by this but for the length of time it will take. By the time I've prepared everything we'd be looking at eating at 7.30pm and we really need to be eating at 7 at the latest. Maybe another time though as it does sound yum.

Any other quicker suggestions?

do you not have a slow cooker? Put it all in the slow cooker as you leave for work wednsday morning and it will be ready to serve at 6pm - 7pm, prep your vegtables on tuesday eve and have them ready for putting in steamer or boil kettle and bring to boil to serve with the casserole.

Do the spanish chicken the night before and then heat up on the wednesday eve - casseroles are always better the second night anyway - You would be able to get it pipping hot in an hour which would then make the chicken safe.

sorry - thursday not wednesday!

though I would be tempted to cook the recipe for spanish chicken on tuesday and reheat on thursday tbh. Then wednesday eve make a pudding

It's not a casserole ivykate, it's more of a roasted dish which I don't think you could cook in advance. I wonder if I could prepare everything the night before and then just bung it in the oven when I get in, would that work do you think?

OK have bought ingredients for spanish chicken & chorozo thing so will prepare night before and cook when I get home. Thanks for the suggestion Grin
