One pot meals

I'm on the hunt for ideas for one-pot meal ideas, ideally things that could be made in large amounts (to eat leftovers the next day or to freeze for future meals).

We eat anything, and we have a one-year-old (so maybe nothing overly spicy?). We tried the one pot lemon chicken from 'Fay's Family Food' this week, which went down very well.

All ideas welcome! Thank you very much...

We've got this book. Well I say we, but acutally my Dad seems to have it most of the time as he loves it so much. Really must get around to buying another copy.

The meatballs in JiltedJohnsJulie's book work really well, but use beef or pork not turkey:-)

Packet of mince
Tin of lentils
Tbsp caramelised onions
One of those little packs of cubed pancetta
Garlic oil
Tbsp of tom puree
Tin tomatoes
100ml water
Good slug marsala/sherry

Fry pancetta in garlic oil till sticky and crisp. Add mince and brown. Shove in all other ingredients and simmer for at least twenty mins, the longer the better. Gorgeous with mash or jackets, specially with grated cheese. We all love it.

I've just made a massive ratatouille that we will then have during the week with steak, meatballs, pasta etc.

One pan chicken is nice & you could use shreaded left over chicken although I use chicke legs.

Chicken.
dice/slice red peeper, courgette, onion, toms & mushrooms
crushed garlic &/or chilli
1 can of toms.
1 pint of chucken stock.

Brown chicken in pan & then add all the ingrediants above.
Bring to the boil & then cover & simmer until the stock has reduced & the veg is all soft & lovely - 30 minutes ish.

We also do mince & pasta although the fresh pasta cooks in a 2nd pan.

Mince.
onion, carrots, courgette (veg cut into small diced pieces.
Bacon lardons.
One glass of white wine.
Cook until carrots are soft & then stir in a giant blob of creme fraiche, cook for another minute or 2 & then stir in cooked pasta & serve with garlic bread.

sausage hash is super quick & cheap although again it's served in our house with a side of baked beans!!

Cooked & diced potatoes
Slices of sausage
diced onion
1 can of toms

Fry the potatoe, onion & sausage & once cooked add in the tinned toms & heat through.
