Got loads of ripe, rapidly heading towards overripe, bananas, and haven't got time to make cake or icecream, or whatever. Can i freeze em, for aforementioned purposes, or smoothies I suppose? If so, sliced or in skins or what?
Ta muchly in anticipation

I have been told yes and when you take them out to eat they are just like banana ice cream. HTH Smile

Yes if you want overripe ones for cooking it works fine. I do it a lot and save them until I need them.

Not sure about smoothies though - not tried them for that.

I have a few in my freezer - having read somewhere that you can freeze them, haven't got round to cooking with them yet.

yes you can freeze them - just in their skins - I do this all the time till I've enough for a banana loaf - the skins go black but the fruit is fine.

Peel and slice - then you can defrost as much as you need for your recipe.
If you want to eat chunks of frozen banana , which is nice, or make icecream, you probably want to freeze them before they get overripe. But for cooking, the overriper the better. They are very easy to mash when defrosted.
