Any ideas for things to do with disappointing fruit?

Regular problem with buying tropical fruit out of season in a northern climate! Any ideas for things to do with disappointing fruit? Currently have 2 x peaches (theoretically ripe and attracting fruit flies but still quite crunchy) and most of a pineapple (underripe, not much flavour, hurts tongue to eat) languishing in the fruit bowl. Might try grilling pineapple but any other suggestions gratefully received. Think they are all too crisp even to make into smoothies.

Compotes are nice for underripe fruit. Gently stew the prepared fruit in a little sugar and water with some flavouring like a vanilla pod or cinammon stick. Serve with some greek yoghurt and chopped nuts.

can you blanch them and then use them for smoothies? Pineapple can go in a sweet and sour in a slow cooker. Roasted peach on a pork chop? Think I've seen it somewhere in a recipe book. Or ice cream using a pint of double cream a pint of condensed milk and the liquidized fruit.

poach them in butter for about 10 mins, then stick in the oven with a sponge mix over the top. Yum.

Throckenholt, do you mean like just a normal Victoria sponge type mix? Never tried this but sounds lovely.

Banana Bread is great to make with slightly brown bananas...lovely sliced, spread with butter, and enjoyed with a nice cup o tea ! x

Poach in butter and sugar, add brandy, flambé and eat with vanilla icecream.

You can ripen fruit by putting it in a bag with bananas for a day or so Smile

Hot fruit parcels. Get baking parchment/greaseproof paper, cut up fruit onto it, squirt some lemon juice over it and seal the baking parchment (fold it over). Place on baking tray, and bake for about 15 mins or so (check to see how the fruit is). Serve with ice cream/cream.

I know what you mean op, my nectarines are just going spongey rather than soft. No idea what to do with them.

Thanks again - some great ideas here.

I have made quite a few banana-y things recently but they are the one fruit we tend to get through quite fast, plus DD has rejected both banana flapjacks and banana cookies Hmm though currently doing quite well with banana muffins.

Do tend to try to keep bananas at bottom of the bowl with other stuff on top to ripen but have to admit the peaches were at the bottom this time.

The peaches were very strange - crunchy and quite flavourless but still overripe enough on the outside to be attracting fruitflies Hmm Hate the going spongey thing!
