Or should I stick to the branded ones?

I've used quite a bit of their organic strong flour and it's fine. Bread made using that flour gets rock hard very fast, so I tend to do 50% strong flour and 50% regular all-purpose. Or freeze the leftovers the day I made them.

isnt flour flour? I see no difference in the cakes I make with mcdougals etc or the ones I make with asda smartprice. its down to the cook not the flour surely?

MrsOtter · 24/03/2011 12:25

That was my thinking lissielou, just wanted to check Smile

lissielou thats my opinion too, especially in cakes / biscuits etc

when making bread some flours do seem to make tastier bread though.
Saying that waitrose essential and tesco normal make perfectly nice bread, and those flours on normal setting make nicer bread than hovis on quick setting

Flour is not just flour. There are different grades and qualities depending on the starting quality of the wheat and the production process. Otherwise it would all be the same price.

MrsOtter · 24/03/2011 16:39

Right well now I'm back to branded

but surely its not the same as chocolate, and if you add a little baking powder own brtand isnt that different? I genuinely cant tell the difference when making cakes, pastry etc. i can sort of see the point if you are making bread though

I make cupcakes in vast quantities and use ASDA value self raising and it make capes that are good enough to sell. I did a bit of a blind testing on them and there was no preference for one or the other.

OracleInaCoracle · 26/03/2011 10:27

exactly blueberry, the grading etc may not be the same, but ultimately its down to the cook. a rubbish cook can use top notch ingredients in the right quantities and it will still turn out badly (my mum is a great example of this)

I agree the better the basic ingredients the better the finished article. Bread does need better as its the quality of the wheat, the process which does make a better loaf and nutricianally its going to be better.

I always go for the best I can afford and sometimes buy on-line as I buy bulk from the mill. '00' grade is a finer grade.

Suppose agree its difficult to taste the difference with cakes. But you also have to consider the traceability of the product too.

Well I always use Lidls flour and my cakes are delicious.
