I need easy easy easy dinners

I have one leg out of action so am struggling, dp is cooking all this week but has lots of work on next week, I can't stand and stir things but could sit and chop and then shove in the oven. I've thought of roast chicken and roasted veg, jacket potatoes but not sure on anything else really. It's for at least 2 weeks could be upto 8 so all ideas would be gratefully received. Thanks :)

Casseroles are great for this sort of thing. Chop up whatever you've got in the cupboard and bung it in the oven for a few hours.

nigella does a chicken tray bake thing with chorizo and pots, would be easy?

I used to make curry by popping chopped raw chicken, onions, peppers and mushrooms in with a good curry sauce jar for about an hour and a half, nice and tender meat and easy. (marks and sparks ones are good)

roast beef doesnt need much attention once its in?

We're a bit rural, no take aways deliver to us un-fortunately. I'm going to do an online shop with a few easy to cook things.

I've never made casserole Blush do you have any recommendations?

I'll look up that Nigella recipe, thank you.

I'll check that DP makes lots of bolognaise sauce tomorrow thanks for the reminder, I tend to flap and panic when things don't go quite to plan and think everything is much more of a problem than it needs to be.

I've always found lasagne quite labour intensive, but I probably faff too much. Did you make a cheese sauce?

hmmm in that case, my favourite oven recipe is cake Grin
no?

roasted veg with balsamic vinegar, mixed through some cous cous with some feta

sausages, chips/wedges and veg/beans

baked risotto (there's a lovely smoked haddock one on the bbc good food website)

For lasagne make the white or cheese sauce in the microwave. It only takes a few minutes. Much better than the traditional way where you have to stand stirring for ages.

pasta 80% cooked on hob
packet of cheese sauce done in jug in microwave
can of tuna
chopped up spring onions

mix it all together

grated cheese on top

under grill for 10 mins

always receives rave reviews in this house despite being easy enough for my 9 year old to make it... in fact i'm about to do it now...

Casseroles - just chop a variety of veg ( I usually have potatoes, parsnips, sweet potato, butternut squash, carrots and green beans) and put it in a big dish. I brown some cubed meat in the frying pan (whatever is on offer) and add a bit of flour at the end to help thicken it. Put the meat with the veg and add stock (plus wine or cider) & seasonings. Shove it in a lowish oven for a few hours voila! Dinner is served! Some people also add tins of tomatoes but I'm not a fan.

I have to admit I only got into making these when I started making baby food! However I find I can prep a huge casserole in about 15 minutes and it freezes really well too.

No making cheese sauce here - just used ready made white sauce from Ragu....Blush

I agree with the big casserole ideas like above - instead of meat you could also use a couple of tins of butter beans or chickpeas, which won't need very long cooking and low maintenance once in the oven.

Or, since it's getting nice and warm now, how about some roasted meat portions with lemon and herbs, or baked fish with new pots and salad? Or if you don't want spuds boiling then some toasted pitta breads and hummus with it?
