Bored with lunches!

Since I can remember I have always had sandwiches for lunch. Now my children all have sandwiches for lunch, and it's so boring!

So, I need ideas please, for us and also the children.

My DC's lunchboxes are:
Ham & cucumber sandwiches (DS1&2)
Ham sandwich DS3
Harvest bar
Apple juice
Apple /carrot sticks/cucumber sticks/satsuma (not always eaten)
Occasional packet if crisps.

I have Tuna or houmous & salad sandwich followed by a piece of fruit.

Requirements are :no nuts for DS2&3
DS3 wil not eat salad - will eat carrot but not lettuce, cucumber.

All are very very good with cooked veg at mealtimes etc if that helps.

DS3 will only eat plain pasta, not in nay kind of tom sauce
DS3 doesn't like cheese

Any suggestions would be gratefully received!

Savoury pancakes (not crepe style) or muffins are lovely for lunch boxes - Annabel Karmel does a delicious sweetcorn pancake recipe (I normally scoff most of them myself....). I do spinach and feta muffins or ham and sweetcorn, also found a nice recipe for a sun dried tomato one which I haven't tried yet. I've done mini quiches and mini meatballs as well in the past. All of these things freeze well too. Oh, and wraps are great too - you can fill them with just about anything, one of my favourites is avocado, sun dried tomatoes, philly, pine nuts and rocket (the last two ingredients optional). Ooh, and coronation chicken....really cant wait for lunch now, this is making me hungry!!

All that sounds lovely! I really must get myself more organised for lunches.

Are the meatballs ok cold? Are they not a bit dry? (i'm thinking of lunchboxes)

Hadn't thought about pancakes or muffins. Thanks Smile

The meatballs are absolutely scrummy, very moist indeed - another Annabel Karmel recipe!! Perfect hot or cold. Of course it all takes a bit (actually a lot...) more effort to do in comparison with sandwiches, but if you do a couple of batches at once and then freeze its well worth it - soooooo nice being able to just open the freezer and chuck into a lunchbox when you're really not in the mood for thinking of/preparing meals.
