ideas for my whole chicken.....

I either roast it and mix it with rice, herbs and A lovely dressing as warm chicken salad, or I roast it as a trad roast dinner.
I need more meal ideas please!!

Ooohh we make a roast chicken last 4 days (Four of us, but DTs only 18 mos, though they do still eat a lot!!).

Roast chicken with stacks of roast veg. Carve off what's left and put it in the fridge in two dishes.

Then... Chicken Korma and rice (we use a Patak's Korma paste with onions, cream and veg)

Then... Chicken, pasta, fresh pesto and peas (so, so easy and yummy too)

Then the carcass goes in for a long bubble, let it cool, take out all the bones and gristly bits and just leave the chunks of chicken, add chopped carrots, celery, potatoes and parsnips. Boil for a couple of hours and you have a divine chicken soup.

Brown the whole thing in a casserole. Set aside. Fry some bacon/lardons, whole small onions or quartered big ones, some garlic and when they are all softened some new potatoes. Put the chicken back in, add seasoning, and a large glass (or half a bottle) of white wine or chicken stock. Lid on. Oven at 190/200 degrees for 1 hr. Take the chuck out to rest then put the casserole dish on the hob, chuck in a load of frz or fresh peas and cook til peas are done (add a little more stock if needed. Then a dollop of cream or creme fraiche (don't have to if you are on a health kick) and lots of chopped herbs - any that go with chicken will do, thyme, chives, parsley, tarragon. Then I serve it all up in a big dish with the pea/potato/sauce bit and then joint the chicken and put on top. Easy, delicious. If you don't like peas you could use a different veg.

I have made it many times. I usually use tinned pineapple and dried chilli flakes. I have left out the parsley a few times too with little effect.

Stuff with Chorizo - makes the whole chicken have a mild chorizo flavour. Lovely!

@remember - not that I've noticed to be honest, but I see where you are coming from. It's one of those easy, pleases all dishes that I do on a Sunday when we are all together. The kids love it which is always a bonus.

We are roasting a chicken on Sunday, but I may have had a rethink perhaps?!?

Leftovers going in Paella on Monday. Think a batch of stock coming on as well for some soup making next week.

It's not very big, so I suspect we will be lucky to make it stretch to that.
