Does anyone have any tips on how to get the crispy skin on the outside and not too mushy but soft potato on the inside?

Thank you!

Crispy skin - Rub it with oil and salt first. Makes a massive difference.

Soft inside - I believe the key is not to heat blast it - so cook it at 190 for 90 mins rather than 220 for 45 mins. I do think a final blast of max heat helps the skin tho.

I microwave them for say 10 mins then wack them in a hot, hot oven for about another 20 mins you get the most dark crunchiest skin with hot fluffy potatoe inside - ummmm!

the only way to make a perfect jacket potato is to put it in tin foil in a fire (like a bonfire that has been burning for a few hours)
leave it there for at least 3 hours andit'll be lovely and warm and crispy

failing that, microwave for 5 mins, tin foil cover then over cook for half an hour.

Make sure you dry them before rubbibg with olive oil and salt. When they are cook slam them down on the table--not just for fun, it fluffs up the insides

Yes microwave first to cook the inside. Rub with olive oil and salt and oven to crisp up.

Also you need a floury potato variety (e.g. king edwards) and not waxy. Local greengrocers sell large but waxy potatoes as "bakers" and I always forget and they're always disappointing :(

The trick is the right variety of potato. Find King Edwards and you can't go wrong. Most supermarkets sell "waxy" potatoes which have longer shelf life, but don;t give a nice baked one. Depending on the size 180C for 1-1.5hours. No tricks, just the right potato and the right temperature.
