tips for making home made bread

hi there

having been inspired by the bbc's great british food revival, michel roux's slot about bread, i made home made bread yesterday from scratch- minus the breadmaker which i always used to use. the result was really amazing! but i did make a few mistakes so i know what to do differently next time.

anyway one of problems i had was finding a warm place for the bread to rise. my airing cupboard wasn't warm enough.

can i put it in the oven on a very low heat to rise? sorry if thats a silly question, i'm just thinking the defrost option on the oven is super low (in fact not warm enough for bread rising) so maybe if i set the oven to a low enough temperature but warm enough it could work??

You don't need a warm place , just leave the dough for longer, a lot longer.
I have made bread all winter in a cold north facing kitchen just fine.
I leave the dough for up to 24 hours. It gives a tasty sourdough crust and bigger open texture, much more like an expensive farmers Market style loaf.

I used to leave mine to rise in an oven at it's lowest setting (50 degrees mine was I think). Worked just fine. So, so so much nicer than shop bought pap.

Does anyone have a good tasty recipe? I had some lovely bread made with gram flour in it, once. Would love to start making my own.

thanks guys! So i guess i just have to see how much time i have/when i need the bread by and decide whether to leave it to it, or give it some warmth to speed it up

normantebbit, try the michel roux recipe on the bbc website (on my phone so cant link to it now) it was lovely and was finished by next morning!

Oh and discovered an ebay shop called onlinebakeryuk where u can buy fresh yeast online
