use royal icing to cut out splat shapes. let it dry over night and then stick to cake just before serving.

If you've got time, you can buy a 'splat' cookie cutter and make them from different coloured fondant. Also, put them on while they're soft so you can 'drip' them over the side.

Thanks. I bought some coloured regal icing tubes...didn't even know it came in different colours. This is my first foray into regal icing shapes!

I can have a look for a splat shaped cookie cutter tomorrow.

While I've got your attention, I'll be baking a sponge tomorrow for my other DSs Birthday on Friday. I will be icing it when he naps on Friday. What's the best way to keep it fresh? Wrapped in foil in an airtight container? Freeze it?

I am making a train for Friday and the paintball cake for Monday (my boys' Birthdays are three days apart!).

On the splats - another way is to make a cardboard template and use it to cut around if you can't find/don't have a use for a cutter. (Or cut them out freehand if you can - I can't!). If you use a madeira recipe instead of victoria sponge it will last very happily for 5 days, double wrap in cling and keep cool but not refrigerated. Freezes happily too, give it at least 12 hours to defrost. Hope the boys love their cakes!
