Help!buttercream keeps curdling!!

Have tried on different occasions to make buttercream icing with my dd but it keeps on curdling!What are we doing wrong?Originally used 'Pure' sunflower spread as my youngest dd has a dairy allergy and then tried a different 'veg spread' and still the same problem!Please help!

I was going to say are you using real butter. Mine has always curdled if I use anything else, so I am no use!

What recipe do you use? All you need is one part "butter" to two parts icing sugar.

use a lot less butter - mixture should be really really dry, not binding at all. Then add a splash of boiling water to bring it all together.

I've done many many experiments with dairy-free buttercream (I make cakes!). This sounds a bit yuk, but it really works and tastes fine. I use Vitalite (the others don't seem as good), with a little bit of Trex - I know Hmm but trust me Wink. Twice as much icing sugar as fats, ie 85g vitalite/15g trex/200g icing sugar, tiny amount of boiling water if you need it, but you usually don't for dairy-free. Use an electric whisk, forget trying to do it by hand, it just won't come together. Use half and half trex/vitalite in your cake too, because dairy free can be a bit dry/crumbly Smile

I use 115g of pure sunflower, 225g icing sugar, 1 teaspoon of vanilla essence and a couple of tablespoons of oatly milk. I normally add cocoa powder to taste for chocolate buttercream (DD loves it).

I shove it all into the magimix and voila.
