What can I do with evaporated milk?

We have at least 4 tins due to DH and I both buying instead of condensed. I thought there would be a recipe on the tin but there isn't.

You can use it instead of single cream - so maybe pour over desserts or fruit. Or make an ice cream maybe?

my Mum used to whisk into semi set jelly to make 'fluff'

I think you can make it into a cheesecake too. Might need to google that. I had it when visiting a friend once and it was v nice.

I may be showing my age here, but at school we used to have butterscotch tart with shaving foam. I think the shaving foam was just whipped evaporated milk.

I made jelly and evaporated milk fluff for my children (it was really for me, but could not justify it as I am a member of weight watchers!) It was even nicer than I remembered.

Bleugh. It belongs back in the 1960s. If your DCs have to take something in for Harvest Festival this year, donate it, it might make an elderly person happy.

There's a milk chocolate cake in the bero book I used to have that I always used to use evaporated milk in unfortunately I don't have that copy any longer, someone you know is bound to though.

Make fudge

1 can evap
8oz butter
2.2lbs granulated sugar

I'm lying I do have it

7oz self raising flour
8oz caster sugar
1/2 tsp salt
1oz cocoa
4oz margarine
2 eggs
5tbsp evaporated milk
5tbsp water
few drops vanilla essence

Oven 180c 350f 2 8" tins (not loose bottom as mixture is very runny)

Mix flour, sugar, salt and cocoa
Rub in Margarine
Beat eggs with milk
Stir egg mix, essence and liquids into dry ingredients and beat well
Pour into tins and bake for approx 35 mins

Rice pudding, made it the other day. Leftover cooked rice, I think I had about a pint or so, bit over, recipe said two cups. 1 tin evap, 1 tin water, a couple of tbsp sugar, five or so cardamom pods, few chopped pistachios. Simmer slowly till thick and eat hot or cold.

There's a quick macaroni cheese recipe in Nigella Express which uses evaporated milk. Sorry can't post it right now

Banoffee pie or millionaire's shortbread. You can boil the condensed milk in the the tin to make a really yummy toffee. Just put the can in a large sauce pan full of water and boil on a medium heat for 3 hours. Do make sure you check the pan every 15/20 mins or so to make sure it doesn't boil dry, otherwise the can will explode from the heat and you will end up with toffee all over the kitchen!

Sorry, a bit late with mine Blush

8oz SR flour
8oz caster sugar
4oz softened butter
2 eggs
sml tin evaporated milk
1/2 tspn vanilla extract

beat all ingredients together until smooth (take care not to over beat) and divide mixture between 2 x 8" sandwich tins, bake at 180c for approx half hour, or until firm to touch

this cake is quite close in texture, and does not crumb as much when fresh, like victoria sponge mix. I use it for decorated birthday cakes.

Sorry my mistake evaporated not condensed...sorry obviously me that's the dense one! DO NOT boil evaporated milk in the can...not quite sure what will happen!!!
