One with butter in or a fatless sponge

a fatless sponge (or whisked sponge) is really only edible that day

a victoria sandwich might last 2 days (depends on the filling ie if it's cream then only until the next day)

Yep if it's a heavier cake (like fruit) or a victoria sponge. Especially if you are going to fill and ice it.

Would be making a sponge, doing a delia, not quite a victoria, one she says is easier and stores longer.

Will freeze fine- but most fun eaten as soon as possible .. Licking the cake bowl recommended only if you know your eggs are salmonella free- ie have lion thing on them- I gave ds aged 2 horrible horrible salmonella by letting him lick bowl.
But make Delia's all in one and you can't go wrong. Sandwich together with jam. lemoncurd, nutella or whatever and eat with kids. Will stay fresh for 3 days if stored in good tin- not plastic one if you can avoid it. Enjoy! Might go and make a cake now just thinking about it!
