Have lost my loaf tin but fancy using up my brown bananas, would it be a disaster?

I don't know. How long does it want you to bake it for?

My timesonline recipe wants it to cook for 1 hour in a loaf tin so in cupcake cases, i'd be looking at it from 15 mins, expecting them to be done in 20 but making use of a skewer to see if the middle is cooked or not.

Let us know how it goes!

Yep, I do this for packed lunches. I use muffin cases and bake for 15ish minutes as Msrisotto says. Normal fairycake cases will probably need checking after 10 mins, easily done by 15 mins.

I've done this. They come out like mini muffins. It will depend on your recipe, I've tried a few and some will be a little dense in cases but just keep checking them until they're done.

Sounds lovely! I might have to do this soon.

breakfastbiscuit thanks for the link I am going to try this recipe this week, I have a few really ripe bananas in my freezer.
Did you do cupcake size or muffin size and also how long did they take and at what temperature.
Thanks for the good idea!

Poppy they are lovely and so easy, I'm well impressed with myself as this is the first thing I have baked since school.

I put them in cupcake cases and they took about 12 mins the preheated oven (heated to about 220 but my oven is a bit temperamental)

Could these be frozen once baked? Would like to make a batch for DS's packed lunches for the week.

Well dh has already eaten 10 so I wont be freezing any thistime, I'm sure I read in the reviews to the link above that they can be frozen.
