Easy recipe for rabbit

I have never tried rabbit before but a friend is bringing me a couple later on. They have already been de-furred and have had the insides taken out.

I have never cooked rabbit before and wondered if anyone had a easy peasy recipe for me to try.

Also if you have tried rabbit, is it nice? I hope the DD's like it lol.

I actually took all the meat off the bone, so could munch without worrying about lil bits. Bit of a faff tho.

Here's my recipe for rabbit casserole.

4 Rabbit portions
1 tsp Flour
Salt and freshly ground black pepper
2 Onions, chopped
1 Red pepper, chopped
2 Carrots, sliced
300ml Red wine
3 tbsp Lemon juice
2 Bay leaves
1 tsp English mustard
1 tbsp Redcurrant jelly
100ml Chicken stock

Method

1.Coat the rabbit portions in the flour seasoned with salt and pepper.
2.Lightly fry the rabbit in a little oil until browned all over.
3.Add the onion and fry for a further 5 minutes.
4.Transfer the onion and rabbit to a casserole dish and add the remaining ingredients. Mix well.
5.Place the casserole dish into an oven at 170 degrees C and cook for 2 hours, stirring occasionally.
