Help! Veggie ideas needed

Hiya

On Thursday I have to go to a Hindu monastery for college for the day. I have to go without eggs, meat and fish from tomorrow. I am willing to do this as a mark of respect, but as I am unable to have dairy or wheat either for medical reasons completely stumped. Any ideas anyone (low fat too please, still have to be weighed Tuesday!)

veg& lentil soup, lentil cottage pie, jacket potatoes, veggie chilli with lots of beans and veg, polenta (dont know what you do with it tho, got some yesterday to try), houmus

think quorn contains egg, not sure if thats important

hummus and crudites to dip in it. Grilled mushrooms with garlic and olive oil on a bed of rocket. Tomato and goats cheese salad. lentil hotpot.

Baked beans on a jacket potato - simple!

Veg stew: kidney beans, leeks, carrots, mushrooms etc (whatever is in the cupboard) simmered with tinned tomatoes, veg stock, and soy sauce. Serve with rice or a baked potato.

Lentil dahl: Fry onions and spices (cumin is yummy), then fry lentils for a minute, before adding lots of veg stock and simmering until a creamy thick consistency. Served with rice or quinoa.

Barley risotto: cook leeks, peas, sun-dried tomatoes and courgettes (again, whatever is in the cupboard), add barley and veg stock and simmer until creamy and tender.

All these meals are low in fat if you just use a little olive oil, and will fill you up nicely as there is a lot of fibre in them.

Should have said, the lentil dhal uses red lentils.

Have got loads of ideas now.

Off to Asda now(thank goodness DH not working today or would have half a bag of lentils, 3 leeks and a carrot to live on)!

Just as a note of interest the eighteen year olds on the course are refusing to stop eating meat as it is an infringement of their Human Rights...

!!
