Jacket Potatoes

So we like jackets, have them maybe once a week/2 weeks. Was on my shopping list.
Tesco had a BOGOF special offer on a large bag, too good a deal not to buy. But now I have 2 huge bags of baking potatoes, and there is only me, DD1(age9) and DD2 (age3).

Suggestions for toppings please, or what else I can do with baking potatoes (I already know from experience that they don't mash or roast well!)

As well as serving with a topping, you can scoop out the cooked flesh, mix with other ingredients eg tuna, grated cheese and a little crème fraiche, stuff the potatoes and warm up again.

If you can get hold of raclette cheese, have a "raclette" meal. Serve jacket pots with melted raclette cheese and ham, salami etc.

They should keep for a few weeks in a cool dark place anyway.

You can bake them, scoop out the flesh use that as mash or shepheards pie topping etc, and then stuff the skins with bacon and cheese, serve with breaded chicken and sweetcorn and peppers and sour cream and chive dressing or BBQ sauce.

Bake them and then chop up roughly and use for bubble and squeak, potato cakes, and fishcakes!

Bake extras when you're having them one night and cut them into big wedges and fry the next day. They used to do this in our uni canteen. They're really nice - you could use them as a side to chilli or something.

Scoop out and mix cheese, cooked leeks & mushrooms. Bacon is nice in the mix too.

then cover with chilli and cheese and return to oven
serve with lots of saladSmile
