I've always like thai food but have never really made it but made a very nice chicken soup thing last night and want to make more stuff like this...

Here's some rough ones for you - I mean rough because I just sort of guess amounts, but will try to make them half understandable Grin

Thai Fishcakes (makes about 6-7)

4 slices bread (whizzed to breadcrums)
400-500g prawns (I use big ones, more flavour) or half crab/half prawn or any white fish like cod or haddock
1 egg yolk
splash thai fish sauce
one small onion
1 fat clove garlic
½ - 1½ tsp barts thai green curry paste
as little or as much fresh coriander as you like

Put about 1/3 bread crumbs to one side for crumbing the cakes.

Put prawns/fish, and rest of the ingredients below them in magimix and give a good whizz till it's more than roughly but less than smooth chopped. Tip into big bowl with remainder of breadcrumbs and mix well and form into patties (or mini balls for nice nibble food), pat gently into extra breadcrumbs and fry in little oil til crispy on each side, then just pop in oven to warm right through - maybe 10 mins at 180.

Prawn Laksa (sort of - my version of)

Heat some groundnut oil in a wok, add good tsp barts green curry paste and fry for about 3-4 mins, add whatever - baby corn, pak choi, edemame beans, peas etc etc and fry for another couple of mins. Chuck in a can or two of coconut milk, splash thai fish sauce and simmer for 10 mins. Throw in some raw tiger prawns for 2 mins til they're pink and then some medium flat no cook noodles. Garnish with shed loads of coriander. You can use as little or as much green curry paste as your taste buds can handle.....

Thai chicken salad. Works with beef, duck, seafood, leftover Christmas turkey etc. I eat it with rice. It's so so so yummy!

An essentail when we lived there was vinegar with sliced chillis in it. Any sort of vinegar but white preferable and any amount of chillis.
