Party sandwich filling ideas

We're doing a 50th birthday party for hubby and serving party food & sandwiches. I really struggling to come up with something different! I need inspiration! Catering for about 20 but would like a nice selection. Any good ideas?

I'm having a party soon and I think we're going with:-

gammon and caramalised onion chutney
tuno mayo and red onion
cheese and onion
prawn cocktail
egg mayo

you could do beef with something, maybe brie and cranberry?

Chicken with lemon/mustard mayo (ie squeeze lemon juice and bit of mustard into mayo!) and rocket

Foccacia in half then put spinach tomates and mozzarella or jars of deli roasted veg (peppers, etc) and maybe spreadable goats cheese. Weight down the foccacia to flatten it a bit and then slice (might be a bit messy though - not sure how finger food it might be?)

Hummus, grated carrot and ham or cheese

Hot smoked salmon or trout and cream cheese.

Maybe open sandwiches -
Smoked salmon
roast beef and mayo with a bit of horseradish and cress or rocket

I've got Jo Pratt's In the Mood for book and in that she does a white bread sandwich (chicken I think) which she cuts crusts off and then very lightly spreads mayo on one cut edge and then dips in poppy seeds - looked brilliant, very snazzy.

Maybe a selection of teeny rolls with fillings together with different types of bread - white, olive, granary, rye (an open rye with smoked salmon would be nice).

Ooh...just thought of another thing that I saw in a Waitrose mag (the one where you order stuff from them for catering) - it was a checkerboard of white and wholemeal sandwiches - just plain fillings really but it was the presentation that made the wow factor.

Actually you should check out the Waitrose catering magazine as it has loads of fab ideas that I'm sure wouldn't be too hard to replicate yourself. here
