Optional coating to breadcrumbs? Any ideas or favourites?

I love Chicken breast coated in breadcrumbs but I would love to try some other coatings. Has anyone got any favourites that work well for a change?

How about oatmeal? It's all healthy and stuff. :) Oatmeal with a bit of (hard) cheese is also lovely, but probably less healthy on account of the fat in cheese.

I have used ritz crackers before. You can use cornflour, that's nice. Egg first, then dip in the cornflour.

Cavalier attitude to cholesterol. Crush a bag of crisps and then sprinkle with finely ground cheese.
Sometimes I just don't care!

If you have leftover doritos/spicy type crisps going stale these are ncie crushed up as a coating.

Also japanese Panko? Pinko? Pinky? type breadcrumsn supposed to be good.

crushed oatcakes work great! :-) Plus they add a really good crunch and a nice nutty flavour - very good on fried chicken, not so sure how well they'd work with a delicate white fish, but worth a try.

Panko breadcrumbs are a bit like little shards, so are really good for adding crunch. As an alternative crush cornflakes with a rolling pin, then you can also bake instead of frying and save on fat :D

Crushed cornflakes - put them in a bag and bash with a rolling pin. First dip into flour, then egg, then the cornflakes. DCs love it.

Or if you want low-carb, try a mixture of grated parmesan and ground almonds. Egg first, then the dry mix.

Agree with whiskyplease - try smokey bacon or other complementary flavours (except prawn, I wouldn't think . . . ) If you use the bag'n'bash method suggested by CointreauVersial, you don't need to use oil for cooking as the coating holds in the moisture.

Cous cous and then bake the nuggets or whatever. Also, Anabelle Karmel got me onto rice crispie coated nuggets, they are AWESOME! Hubby loves them more than the boy.

Instead of breadcrumbs IN things, I use couscous. Yum!
