Hoping some ladies (or gents perhaps) here can help, I am searching for a scone recipe. I've used many. My scones never seem to rise like the ones I stare enviously at in the windows of local bakeries. Today I came across a recipe involving mayonnaise, ive made cakes with mayo before, so I thought I'd try it, but they came out looking like Yorkshire puddings and tasting like stodgy bread. Can anyone offer any scone wisdom?

Use SR flour with extra baking powder, use butter milk and never over-handle the dough, mix it with a knife as quickly as possible and get in the over asap.
Your scones will be fabulous!

delia's buttermilk scones.

I made these for dcs' school cake sale recently. One person told me he ate six! They are good.

Google Alison Holst lemonade scones, they are great! A bit different too, I wouldn't do any others.
BTW Alison is the NZ version of Delia.

I always double sieve the self-raising flour, and very little handling of the dough. Heat the baking sheet up while I make them too.

Delia origionl Cookery course book recipe. Never roll them with a rolling pin just push the mix with your hands. work as quick as possible, handle as little as possible, make tham twice as thick as she says and cook quickly in a hot oven. They have never failed me
