Got a load of apples that I don't fancy eating but need using. Thought about making an apple cake, can I use non cooking apples in a cake? Any recipes or alternatives?

yes - i do - sometimes put a bit of pear and banana in too - good way of using up slight 'over' fruit

Thanks, should I just stick them in a normal sponge mix?

I'd use them in a cake. Also crumble. And you can grate them into muesli with yoghurt for breakfast

Most of the recipes that are out there are for eating rather than cooking ones, IME. Trad Dorset Apple cake is cookers, but most apple cakes use eaters.

Here's one that would be good with eaters

We have a n eating apple tree and i always cook them. I usually part boil them first to soften them up a bit, before putting them in a pie, apple crumble or apple cake. Taste lovely with a bit of mixed spice or cinnemon.

I love this apple cake.
I've made it a few times & everyone loves it.
I've followed the recipe but also made it a little different, instead of demerara sugar on top i put crumble mix which gives it a different but nice texture.

I often use tinned fruit as an alternative to fresh. Tinned pears & apricots do very well, but I'm sure cherries or plums would work, especially if served with custard.

I Always use eating apples in cooking instead of 'cooking' apples as generally you need sugar to compensate for the tartness of cooking apples.
