What do you do with pork chops?

I've managed to overbuy loin chops (thanks to internet shopping!) - what can I do with them? I only ever use them to make a mustard pasta dish, but I'd really like to try something a bit more interesting.

I cook them in the oven with Thyme and paprika, creamed leeks and mash

I do a few things with them. Sometimes I just make a nice BBQ sauce to pour over, last night I coated them in a soy/honey/lime marinade or sometimes I cook them with sliced apples, cider & cream.

I grill them until they are JUST done (I hate overcooked meat, but won't serve pink pork), salt them, then serve with mashed potato, carrots and gravy.

  1. Fry an onion, add chops, add a sliced apple (Granny Smiths are good), add a little flour, a pork stock cube, thyme, and cover with water. Put in oven at 160degrees C for at least an hour.
  1. Fry an onion, and plenty of sliced muchrooms, until the mushrooms lose all their liquid. Season to taste. Lay pork chops on a baking tray, pile on mushroom mixture, top with a slice of cheese (Leerdammer, or Emmental are good). Bake for about half an hour at 200 degrees C.

I do lots of things with pork chops. Slice them up and stir fry with veg and plum, sweet and sour or black bean sauce. Coat with HM plum chutney for DH and plum jam for me and cook in hot oven = yummy. Grill and serve with apple sauce, apple slices, curried rice, waldorf salad (not usually all of these at once!).

Stick them in a slowcooker with a tins of tomatoes, a tin of beans, a chopped onion and half a cup of water with some curry powder mixed in. Cook on low for 6-8 hours.

Serve over mash and with crusty bread.

Sautee with onions

Cut the bone off, tenderize, put salt and pepper, cover in flour, lightly beaten egg and breadcrumbs. Fry.

Marinate in soy sauce and lots of crushed garlic overnight and then pan fry (or just fry Grin). Lovely with noodles and stirfried veg, or with mustard mash and winter vegetables (I do roasted parsnips, red cabbage, cauli cheese etc).

Brown on each side and put aside. Slice and fry some mushrooms and clove or two of garlic, Add tbls plain flour, cook for minute or so, add juice of one lemon and season. It all looks crap at this stage... take a double sheet of foil, put chops on, dollop of mushroom sludge on each, tbls of double cream on top of each chop, seal parcel and bake for about 20-30 mins depending on thickness at 190. Looks odd, sounds odd, tastes divine. Nice with anything really, but v. good with crisp salad.

spread with dijon mustard,then put apple sauce on top of that, then a mix of breadcrumbs and mozzerella. Oven bake. Crispy on top with juicy apple underneath.

bake them with a sliced onion & sliced green pepper, tin of tomatoes, beef oxo, 1/4 pt water and tablespoon of worcestershire sauce

Best way is to coat in seasoned flour, fry off, then fry onion & pepper and add rest of ingredient. Either simmer on stove or bake in the oven for an hour

marinade for 6 hours in lemonade , chinese 5 spice and soy sauce, grill/fry and serve with noodles.

I like Delia's sherry vinegar recipe:
Coat each chop in flour and fry with shallots and garlic. When nice and brown, sprinkle with thyme. Add 10floz sherry and 3 floz vinegar, simmer for 20 min. Turn over chops and cook further 20 min. Just before serving, stir in creme fraiche.
It is very nice and piquante; not at all vinegary.

grill them then put a blob of apple sauce on them and grated cheese and put back under the grill until cheese has melted simple and lovely
