Light supper ideas please.

We have the same problem every day, what to have for supper. DD1 is 21 months and luckily eats most things at the moment.

DH and DD1 both eat their main meal in the day at school, I am on maternity leave at the moment, but also eat my main meal in the day.

So what to have for supper? I need meals that are quick and really easy. DD1 finds pasta a bit heavy at night and DH is picky about having too many sandwiches.

This week we have had
home made pizza
broad beans and ham with crusty bread
pea soup
fish finger sandwiches
cous cous salad

Any ideas?

How about -
veggie stir fry with noodles
Spanish omelette
Quesadillas
Crusty bread,olives,serrano ham,salami,humous & veg crudites

Will have a think of some more

Stir fry is a great idea, DH often makes it, but I don't have his knife skills. I feel I am the one at home at the moment, so should cook.

Spanish omelette, yummy!

Bits to pick at and Quesadills great idea too

Ciabatta, spread with pesto and then put in sliced mozzarella, sundried toms/onion/peppers (whatever you like) then pop back in the oven to melt - delicious!!!

Potato skins - bake some small potatoes, scoop out middle (just leave a small amount of potato lining the skin) and mix the scooped out potato with soft cheese & bacon then refill, top with grated cheese and pop back in the oven to melt and skin to crisp up

Puff pastry, rolled out and make edges. Then fill with mixture of ricotta OR goats cheese, spinach, sundried toms and bake in oven.

How about -

  • Pitta bread and hummus to dip into, with vegetable crudites to dip in as well (carrot batons, cucumber sticks, raw cauli florets, cherry tomatoes etc). making your own hummus is sooo easy with tinned chickpeas and is yummy and healthy.
  • Falafels and salad in pitta bread (can you tell I like pittas?)
  • ready roasted chicken with salad in wraps
  • super scrambled eggs (made with sauteed red peppers,mushrooms and cherry tomatoes in) on toast with grated cheese on top
  • home-made soup e.g. roasted butternut squash soup, creamy mixed vegetable, smoked haddock chowder, chunky minestrone etc etc
  • jacket potato with grated cheese and diced ham or bacon
...as they say, the possibilities are endless!

This thread is making me hungry! I am on low-carb diet at the mo so could have a nice bedtime snack of cheese...but will try not to!
One of our favourite light suppers (in addition to those already mentioned) is turkey burgers with salad. We had that tonight actually. Slices of cucumber, avocado, tomato, celery, then people can take the bits they like.

Soup - any combination is great with some chunky bread.
Jacket Potatoes - you can have simple beans and cheese or anything that takes your fancy
Quiche and Salad
Tortilla wraps served with Chicken, peppers and onions (fajitas) or any other filling....
Hot chicken salad with crunchy bread
Puff pastry tart with caremelised onions, basil, a dash of d.cream and balsamic vinegar with salad

I am a useless cook, but I am trying.

DH ALWAYS cooks, he is cooking lunch as I type.

I just feel while I am on maternity leave I need to get the supper ready for when DD and DH come in.
